I

t’s pick-up day at Moutoux Orchard and it looks nothing like the scene at your nearest grocery store. It is mid-March when I went to visit, there is snow on the ground and members of the Moutoux year round whole-diet CSA are picking up their fresh veggies, milk, eggs, meat and fresh flour for this week’s meals. A buzz of activity- as adults pick out their food and the kids weave in and out of the barn playing. The CSA, run by Rob Moutoux and Maureen Moodie (who everyone calls Mo), is in its fourth season and provides a full diet of meat, dairy, eggs, vegetables, fruit and whole grain flour for 75 families year round. “Our goal is to provide an important service to the our community- healthy food year-round, sharing with each other the bounty and the occasional leaner times,” Rob says somewhat apologetically as he glances at the teaming table of food. A table that contains cabbage, potatoes, radishes, napini, cilantro, lettuce mix, eggs, milk, nuts, fresh flour and grains, not to mention an assortment of meats that would make a butcher

blush. And these are the lean times I think. Suddenly a member chimes in, “I am still working on the bounty from this summer, I am still eating off of tons of tomatoes and other produce that I canned.” Mo explains, “During the summer we produce lots of extra veggies that are available for canning. Members share recipes. Some have even set up a yahoo group so they can keep in touch between pick-ups, and get their kids together for play-dates.” Suddenly a voice from about knee level finally finds her chance, “Farmer Mo, can we go see the baby goats?”. Everyone, young and old seizes on the idea, the opportunity to visit Maddie, the day old Jersey calf and the two baby goats that are keeping her company. With everyone ogling over the new editions to the fold, I have a chance to do the math. What do you get when you add together a beautiful farm, two friendly hard-working farmers, 75 CSA members, and a year round full diet of healthy whole foods and fresh air? A healthy yearround community.

he Hatch family raises primarily grass-fed and finished Angus cattle and sheep on their family farm south of Leesburg. Farmer Chris Hatch recommends the “Low and Slow” method for cooking roasts to achieve maximum tenderness and flavor: Cook your roasts at 215° for one hour per pound. Check with a meat thermometer for the rare, medium or well-done finish you desire. For tougher cuts like chuck or arm roasts, Chris recommends searing the meat before putting it in the crock pot to keep the juices in. Chris makes a Tamale Pie, a one-pot recipe that can easily adapted to your family’s size, taste buds and time.

CORNBREAD TOPPING:

Can be made from your favorite mix or: ½ cup yellow corn meal
1 cup all-purpose flour
¼ cup + 3 tablespoon sugar
1 teaspoon salt
2 ½ teaspoons baking powder
¼ cup +2 tablespoons oil
½ cup milk
2 eggs

Preheat oven to 400°. Brown the meat, then add onions and garlic. When onions are translucent and soft, drain off fat and add other spices and peppers. Mix together, then add cheese and salsa. Finally add corn, beans and tomatoes. Heat thoroughly. If using an oven-proof pot, continue in this pot, otherwise put ingredients into a casserole dish. Make up the cornbread mix or mix separately above dry and wet ingredients, then using a wire whip, mix wet ingredients into dry ingredients lightly for an evenly-mixed but lumpy batter. After leveling the meat filling, spread the cornbread batter on top and put in the oven. Cook for 15-20 minutes or until a toothpick inserted comes out clean. Serve with salsa and sour cream.

pening a restaurant like Market Table Bistro was always a dream for Rebecca Dudley and Jason Lage, both of whom went to culinary school and later met while working at Lansdowne Resort. They each grew up in rural locations where farm to table wasn’t a trend as much as it was a way of life. Lage’s mother and grandmother cooked with primarily locally sourced and seasonal ingredients, and that’s a concept he has always wanted to bring to his own business. In 2010, Dudley and Lage formed a business plan to go along with their passion for cooking seasonal, locally sourced food. location, and I was nervous about being so far from everything else,” Lage says. “I’m much closer to the source now, and I wouldn’t change the location for anything.” Dudley and Lage developed relationships with 52 local farmers, and in peak season (May to October) 80% of the food on Market Table Bistro’s menus comes from those farms— including the wines, liquors and even the artwork on the walls. Lage, who is the executive chef, does as little as possible to the food, always aiming for pure, straightforward flavors. In the next year, they plan on adding wild and foraged foods such as mushrooms and herbs to their list of local ingredients. “Food should be soulful and comforting, but it also should be refined” Lage says. “We want people to feel like they are eating at someone’s house—someone who really knows how to cook.”
