2017 CAI SUMMER CAMPS INTRO TO BAKING & PASTRY - AGES 10-14

Come and see what Chef Larissa Binkley has in store for you this summer at this Junior Chefs baking camp. This dessert class will be filled with quick and yeast breads, pies and tarts, custards, mousse, cakes, cupcakes, cream puffs and eclairs. Students will learn how a professional baking & pastry kitchen works and practice techniques to create wonderfully delicious treats. INTRO TO CULINARY - AGES 14-17

This culinary camp will introduce students to the world of professional cooking, covering the ins and outs of how to work in a professional kitchen, from the importance of a chef’s uniform to how to set up your station to basic knife skills and cooking techniques. Everything from mise en place to main dishes will be taught by Chef Shawn Murray giving students a good foundation so they can further explore culinary creations on their own. INTRO TO CULINARY - AGES 10-14

This Junior Chefs culinary camp is for aspiring cooks, who are interested in cooking and learning more. In this class, Chef Jim Brinkman will introduce students to the professional kitchen and how it works. Students will learn the proper way to use a knife; handle vegetables, meats and dairy products; and basic cooking techniques. INTERNATIONAL FOODS - AGES 14-17

Being a chef means you have mastered the twelve culinary techniques, which are used the same way around the world in every culture. In this session, Chef Ben Vozzo introduces your up-and-coming chef to the cuisines of the world, from fresh pasta to Asia and the Caribbean. This session is for more experienced cooks in training. AMERICAN REGIONAL FOODS - AGES 10-14

Our country’s bounty has provided the ingredients for iconic regional fare, and Chef Jim Brinkman will take you on a culinary journey focusing on ingredients and dishes found in some noteworthy regions of America. 2017 CAI SUMMER CAMPS CAI SUMMER CULINARY ACADEMY

The Culinary Arts Institute (CAI) of Montgomery County Community College is offering one-week culinary camps to students, ages 10-14 and 14-17 years, who are interested in the culinary arts. These camps are taught by CAI instructors who have years of industry experience. Students will review basic skills and experience hands-on classes that will highlight global cuisine from appetizers to desserts. They will be handling knives and other equipment in the kitchen so it is essential that they follow the instructors’ directions. Each day will culminate with a presentation of the food prepared by students using the techniques learned. Students will receive a certificate of completion and a special CAI gift. Location: The Culinary Arts Institute, 1400 Forty Foot Road, Lansdale, PA 19446. Families will be responsible for transportation.

What to Wear: Students will need to wear the following during this camp for safety reasons: • Long pants; no shorts • Shirts with at least short sleeves; no tank tops • Long hair must be pulled back; no jewelry • No open-toed shoes or flip flops (sneakers are okay)
