muoversi con le ali ai piedi... nudi

n numero sempre maggiore di amanti della natura, ma non solo, sta scoprendo il piacere di spostarsi col... cavallo di San Francesco, ossia a piedi come faceva il poverello di Assisi che camminava senza calzari, utilizzando come appoggio un semplice bastone che considerava come il suo ronzino. Un bastone ben diverso da quelli supertecnologici al carbonio e fibra di vetro che danno sostegno e aiutano a tenere il ritmo del passo a una particolare categoria di appassionati marciatori ecologici che vanta già vari decenni di vita, quella del Nordic walking. La tecnica ricorda lo sci di fondo e favorisce la dinamicità cardiovascolare oltre a corroborare il funzionamento del cuore e dei polmoni e a rinvigorire l’apparato muscolare. Nordic walking a parte, la pratica del viaggiare a piedi sta attraversando un momento di notevole rilancio grazie a un rinnovato interesse per la vita all’aria aperta nel rispetto dell’ambiente naturale. Sempre più adepti si mettono in cammino per il gusto di muoversi lentamente e vivere un’esperienza armoniosa ed eco-sostenibile. Del resto il viaggio pedibus calcantibus rappresenta l’abitudine più inveterata di spostarsi. Inoltre il ritmo lento di marcia consente una full immersion nel paesaggio e una migliore acquisizione delle attrattive e dei valori dei luoghi attraversati. Si avanza serenamente sincronizzando i passi col proprio ritmo psicofisico interiore e familiarizzando coi compagni di escursione. E al termine ci si sente più tranquilli e tonici perché la ripetitività dei movimenti e la simbiosi con l’ambiente sgomberano la mente dallo stress e dissolvono l’energia negativa accumulata durante la routine quotidiana. Nell’ambito di questo revival del cavallo di S. Francesco si va sempre più consolidando una corrente più purista o, se si preferisce, più estremista, quella dei gimnopodisti che caldeggia di viaggiare addirittura a piedi nudi per un connubio più totalizzante e intenso con la terra e quindi con la natura. Un’abitudine desueta che ci riporta alle origini del genere umano. I più integralisti fra i suoi predicatori invitano a non indossare calzature perfino durante le attività quotidiane. “Libera i piedi, la mente li seguirà”: questo lo slogan dei seguaci sempre più numerosi del barefooting, la nuova filosofia pratica di vita che intende rimarcare l’importanza di camminare scalzi, ricreando il radicamento nella natura grazie al contatto dei piedi nudi sulla terra. Come hanno rivelato varie ricerche, il barefooting produce effetti preziosi oltre che sul benessere dei piedi anche sulla circolazione del sangue, sulla termoregolazione e sulla postura agendo come un massaggio naturale, specie quando si calpestano superfici ruvide. Lasciamo in materia il giudizio agli esperti non senza ricordare che girare per prati senza scarpe è di rigore, per chi ci crede, durante i riti propiziatori nella notte delle streghe, quella di S. Giovanni tra il 23 e il 24 giugno, che si celebra in molti luoghi. La rugiada che bagna i piedi, appunto la “guazza di San Giovanni”, è considerata un toccasana per tanti mali. Infatti, come recita un vecchio adagio, “la guazza di San Giovanni fa guarire tutti i malanni”. Il piede non poteva non colpire l’attenzione di un genio quale Leonardo da Vinci, che lo giudica un’autentica opera d’arte oltre che un capolavoro di ingegneria. Le sue 26 ossa, i tendini, i muscoli e i legamenti creano una architettura ineguagliabile che consente passo per passo di avvicendare rigidità e flessibilità. Inoltre la pelle che lo riveste è sensibile, resistente e capace di rigenerarsi continuamente. Ma è anche ricca di ghiandole sudoripare che hanno una funzione determinante nella termoregolazione dell’intero corpo. In Italia esistono diversi itinerari creati per i gimnopodisti. Vale la pena di segnalarne uno di straordinaria attrattiva situato nella punta più a sud di Sardegna, dove ci si può liberare delle scarpe e camminare tra le dune di sabbia della spiaggia Su Giudeu di Chia. Il sentiero per il barefooting riunisce quattro terreni diversi con altrettante sensazioni da provare una dopo l’altra. Dal prato del giardino all’inglese, si passa alla passerella di legno che attraversa il parco di vellutate dune, rifugio dei fenicotteri rosa. E per chi lo desidera, dopo il contatto dei piedi nudi con le sabbie bianche, c’è il mare ad attendere.

MOVING WITH WINGS ON OUR FEET... BARE FEETÙ

A

growing number of nature lovers, and others, are discovering the pleasure of moving by… Shank’s mare, in other words, walking, like the poor man of Assisi who walked without shoes, using as a support a simple staff that he considered to be like his nag. A very different stick from the super-high-tech carbon and fiberglass ones that give support and help keep pace for a special group of passionate walkers, ecology enthusiasts whose activity has been booming for decades now, Nordic Walking. The technique is reminiscent of cross-country skiing and promotes cardiovascular health as well as corroborating heart and lung functions and reinvigorating the muscular system. Nordic Walking aside, the practice of travelling by foot is undergoing a remarkable revival due to a renewed interest in outdoor living with respect for nature. More and more converts are walking to enjoy moving slowly and experiencing a harmonious and eco-sustainable adventure. After all, travel by pedibus calcantibus is the most inveterately habitual way of moving. What is more, the slow pace allows you to become fully immersed in the landscape, to gain a better sense of the attractions and values of the places you’ve passed through. You progress serenely by synchronizing your steps with your inner psychophysical rhythm and getting to know your walking companions. And by the end, you feel more relaxed and toned because the repetition of movement and symbiosis with the environment relieves mental stress and disperses the negative energy accumulated during the daily routine. On the topic of this revival of Shank’s mare, there is an increasing trend toward a more purist approach or, if you prefer, a more extreme approach, that of the gymnopedists, who actually encourage walking barefoot for a more complete and intense communion with the land and therefore with nature. An archaic practice that takes us back to the origins of mankind. The most fundamentalist of its proponents invites people to go without footwear even during their daily activities. “Liberate your feet, and your mind will follow”: this is the slogan of the ever-increasing number of followers of “barefooting”, the new practical life philosophy that seeks to emphasize the importance of walking barefoot, recreating a rooting in nature thanks to the contact of bare feet with the earth. As various researchers have revealed, barefooting also has valuable benefits for the health of the feet, including better blood circulation, thermoregulation and posture. It acts as a natural massage, especially when treading on rough surfaces. Let’s leave the judgment to the experts but not without remembering that walking without shoes on lawns is de rigueur, for those who believe, during the propitiatory rites on the night of the witches, Saint John’s Eve, between June 23 and 24, which is celebrated in many places. The dew that bathes the feet, “St John’s dew”, is considered to be cure-all for many things. Indeed, as an old adage says, “St. John’s dew heals all ills”. The foot could not fail to catch the attention of a genius like Leonardo da Vinci, who deemed it an authentic work of art as well as a masterpiece of engineering. Its 26 bones, tendons, muscles and ligaments create an unparalleled architecture that allows each step to vary in rigidity and flexibility. Also, the skin that covers it is sensitive, tough and capable of regenerating continuously. But it is also rich in sweat glands that have a decisive function in the whole body’s thermoregulation. In Italy, there are several routes that have been created for gymnopedists. It’s worth noting one that is extraordinarily attractive, located on the southernmost tip of Sardinia. There, you can get rid of your shoes and walk among the sand dunes of the Su Giudeu di Chia beach on the barefooting trail that unites four different terrains. And there are just as many emotions to experience, one after another. From the lawn of the English garden, you go to the wooden walkway that crosses the park of velvety dunes, an oasis for pink flamingos. And for those who want it, after walking the white sands in your bare feet, the sea awaits.

altra Sardegna. La più autentica, che svela la magia di tradizioni forti e durevoli nei secoli e lascia in bocca un sapore nostalgico. Nel cuore di quest’isola meravigliosa, dal 1° settembre al 17 dicembre, 32 paesi della provincia di Nuoro daranno vita ad “Autunno in Barbagia”, una serie di eventi dedicati all’arte, alla storia, al folklore, all’artigianato e all’enogastronomia. Una manifestazione ispirata alle Cortes Apertas (Cortili Aperti): le case storiche del paese aprono i cortili e svelano ai visitatori percorsi turistici, enogastronomici e artistici. Un viaggio sensoriale promotore delle eccellenze produttive e tradizionali di una terra attenta e custode dei propri tesori che coinvolge il pubblico dei viaggianti. Si riscoprono i riti quotidiani del passato: le massaie impastano il pane e i dolci, ricamano con maestria gli abiti tradizionali, tessono i tappeti e gli arazzi e intrecciano cestini di giunco, mentre gli uomini pigiano le uve e preparano il formaggio, gli artigiani lavorano il ferro battuto, la filigrana, la ceramica e i falegnami intagliano il legno. Il territorio offre una cucina semplice e povera di ingredienti, arricchita da sapori genuini con il sapiente uso di aromi offerti dalla coltura spontanea di erbe aromatiche. Tutti prodotti enogastronomici a “Km zero” serviti in maniera tradizionale o con originali rivisitazioni. Lungo le stradine dei centri storici i profumi proiettano il passante indietro nel tempo. Odori di vinaccia, di distillati fatti in casa, di affumicato e tostato, di formaggi e carni stagionate e del pane carasau cotto nel forno a legna. Nelle corti si alternano gli artigiani con i mestieri vestiti con gli abiti tradizionali del paese di origine che, nei dettagli, si differenziano dai colori - accesi e sgargianti dell’azzurro e del rosso o del nero, composto e austero, testimoni dell’influenza araba e spagnola - e dalle filigrane d’oro che li adornano. La manifestazione inizia da Bitti - con le sue domus de janas e menhir -, passa per Oliena - rinomata per la produzione del vino Cannonau Nepente - e giunge ai piedi del Monte Bardia dove si estende Dorgali. In lontananza si aprono le scenografiche falesie del Golfo di Orosei. Al trekking e alle passeggiate a cavallo si possono alternare escursioni in canoa o in barca sul lago Cedrino. Per i più golosi si consiglia un passaggio a Tonara seguendo “le strade del torrone”: un itinerario tra boschi di noci e mandorle della Barbagia, dove si può

assaggiare il torrone nelle sue variazioni al miele di corbezzolo e castagno. Anche l’occhio vuole la sua parte. Gavoi, forte della sua tradizione orafa, regala alla vista gioielli in filigrana d’oro e d’argento, impreziositi con gemme. Alle pendici del Supramonte troviamo Orgosolo, dove i murales decorano le abitazioni del centro storico, e da qui si giunge al Parco Nazionale del Gennargentu. Esperienza unica è l’escursione guidata fin sopra la cima del Monte Novo San Giovanni che si conclude con il pranzo con i pastori e il coro di tenores che intona vibranti melodie. Espressione, invece, della Sardegna ancestrale sono Mamoiada - famosa per i suoi antichissimi riti con le maschere dei Mamuthones e Issohadores e per i vitigni autoctoni come il Cannonau e la Granazza e infine Nuoro, città ai piedi del Monte Ortobene: una foresta incantata sulla cui cima, nel mese di agosto, si svolge la festa del Redentore con canti e balli folkloristici.

Food, art and traditions: simply Barbagia! A sensational journey to rediscover the daily rituals of the past revisited by the flavors of the present: in the province of Nuoro the courtyards open their doors to visitors revealing the fragrances and colors of an ancient history

T

he other Sardinia. The more authentic Sardinia that reveals the magic of strong traditions that have endured over the centuries, leaving a flavor of nostalgia in the mouth. In the heart of this wonderful island, from September 1 to December 17, 32 towns in the province of Nuoro are hosting “Autumn in Barbagia”, a series of events dedicated to art, history, folklore, handicrafts and gastronomy. An event inspired by Cortes Apertas Open Courtyards: the country’s historic houses open their courtyards and unveil events involving tourism, gourmet cooking, and art to visitors. A journey of the senses to promote excellence in the products and traditions of a territory full of self-awareness that guards its treasures, and involves the public of

travelers. The daily rituals of the past are rediscovered: housewives make bread and sweets, masterfully embroider traditional clothes, weave carpets and tapestries and make cane baskets, while the men crush grapes and make cheeses, craftsmen work with wrought iron, filigree, ceramics and carpenters carve wood. The territory offers a simple cuisine with few ingredients, enriched with genuine flavors and wise use of aromas thanks to the aromatic herbs that grow so spontaneously. All the food and wine is “zero kilometer” and served traditionally or with original revisitations. Along the narrow streets of the historic centers the scents carry you back in time. Odors of wine marc, homemade spirits, of smoking and toasting, cheeses and seasoned meats, and carasau bread baking in the wood-burning oven. In the courtyards, artisans take turns, wearing the traditional dress of their areas, with details that differ by color - bright and glowing blue and red or black, sober, austere, bearing witness to the Arab and Spanish influences - and by the gold filigree that adorns them. The event that started in Bitti - with its domus de janas and menhir - went to Oliena - renowned for its Cannonau Nepente wine - arriving at the foot of Monte Bardia where Dorgali extends. For those who love food, we recommend going to Tonara along “Le strade del torrone (the nougat roads)”: a route among Barbagia’s walnut and almond trees, where you can taste a variety of nougat with corbezzolo honey or chestnut honey. And there is something for the eye. Gavoi, with its great goldsmith’s tradition, has filigree jewelry in gold and silver, embellished with gems. On the slopes of Supramonte we find Orgosolo, where murals decorate the houses of the historic center, and from there you can go to Gennargentu National Park. A unique experience is the guided hike up to the top of Monte Novo San Giovanni, ending with lunch with the shepherds and the tenor choir singing vibrant melodies. The expression of ancestral Sardinia is Mamoiada - famous for its ancient rituals with the masks of the Mamuthones and Issohadores and for native grape vines such as Cannonau and Granazza. Finally there is Nuoro, a town at the foot of Monte Ortobene: held at the top of this enchanted forest, in August, is the Festa del Redentore with folk songs and dances. ■

uando si viaggia si ha il desiderio di portare a casa qualche souvenir che ci ricordi le bellezze e le emozioni dei luoghi visitati. Mosca, capitale della Russia, è una città dai mille volti in costante mutamento. Vi offro qualche consiglio su come trovare, anche in poco tempo, qualche bel ricordo da conservare, dopo averla visitata. Io, da persona pratica quale sono, opto sempre per oggetti utili, come ad esempio le famose stole di Pavlov-Pasad. Le producono gli artigiani di una piccola città non

lontana da Mosca, con il tipico disegno floreale che le rende uniche. Ovviamente non si può evitare di acquistare qualche matrioska: ce ne sono di diversi tipi, tutte molto belle. è indispensabile visitare la Piazza Rossa e il famosissimo centro commerciale GUM, che si trova lì da ben 120 anni. All’epoca sovietica consisteva in una galleria di negozi di abbigliamento e profumeria dove andavano tutti i cittadini per fare la spesa. La fontana al centro del pianoterra della galleria con il tetto vetrato era un punto di ritrovo per le persone che vi andavano anche per mangiare il famoso gelato di GUM in una cialda a forma di bicchierino. Oggi al GUM vendono anche auto occidentali lussuose, così come tipici souvenir e le specialità russe, come vodka e caviale. Vicino alla Piazza Rossa si trova un altro centro commerciale sotterraneo, l’Ohotniy Riad. Qui, vengono proposte famose griffe tipo Mango, Zara, Nike. A due commerciali storici e suggestivi: lo TSUM e il Gostiniy Dvor.

Se dalla Piazza Rossa salite su per la strada principale Tverskaya, trovate invece un meraviglioso negozio gourmet, l’Eliseevskiy. hen we travel, we want to bring home some kind of souvenir to remind us of the beauty and excitement of the places we visited. Moscow, the capital of Russia, is a city with a thousand constantly changing faces. Let me offer you some advice on how to find, even in a very short time, some good memories for safekeeping, after visiting it. Being a practical person, I always opt for useful items, such as the famous Pavlov-Pasad

stoles. They are made by artisans in a small town not far from Moscow, with the typical floral design that makes them unique. Of course you can’t avoid buying a few matryoska: there are different types, all very beautiful. You absolutely must visit Red Square and the famous GUM shopping mall, which has been there for 120 years. During the Soviet era, it was a gallery of clothing and perfume shops where all the citizens went shopping. The fountain in the center of the gallery floor with the glass roof, in the past, was a meeting place for people who also went to eat the famous GUM ice cream in a wafer shaped like a little cup. Today, GUM also sells luxury western cars as well as typical souvenirs and the Russian specialties, such as vodka and caviar. Near the Red Square is another modern underground shopping mall, Ohotniy Riad. This is where you can find popular brands like Mango, Zara, and Nike. A short walk from Red Square are two more historic and impressive shopping centers: the TSUM and the Gostiniy Dvor. If you come up from the Red Square to the main Tverskaya thoroughfare, you will find a wonderful gourmet shop, Eliseevskiy. Built in 1901, today it has the best Russian delicacies but also delicacies from all over the world. Another interesting historical site is Stariy Arbat (the Old Arbat). Here, on a pedestrian street that is a kilometer long, people traditionally sell well-made souvenirs of all kinds. If you have an extra day, go to the markets! Especially if they take place on Saturday or Sunday. The most famous is Izmailovo, where you will find plenty of handcrafted souvenirs from all over Russia: collectors’ items, clothes, wooden figurines, paintings and jewels. For those who love food, on the other hand, you must go to the Danilovskiy and Usacevskiy markets, where you can also eat very well in the numerous bars and restaurants inside. Russia, as we all know, is famous for the custom of drinking hot tea. On Via Miyasnizkaya, in 1890, a fascinating teahouse was built, and you really must visit it. The architecture is very special, and the tastings, flavors and scents of tea and coffee from all over the world will leave you with unforgettable memories. Finally, if you want to buy an Ushanka fur hat, get a handmade original in a leather goods store that is part of the Sneznaya Koroleva chain. They are very stylish and very well made. Sinagoga Centrale Prima dell’Ottocento a Milano non esisteva un luogo ufficiale di culto della religione ebraica, se non il piccolo oratorio di via della Stampa. Nel 1892 venne edificata la sinagoga, in via della Guastalla. Il tetto fu colpito durante i bombardamenti del 1943 e l’intero edificio quasi distrutto per essere poi ricostruito e, successivamente, restaurato nel 1997.

In via Torino, a due passi dal Duomo, addentratevi alla scoperta di questo luogo, che rappresenta uno dei colpi di genio del Bramante. L’edificio è noto per il suo “finto coro”, capolavoro della pittura prospettica rinascimentale italiana. Entrando, infatti, non noterete nulla di strano e lo spazio dietro l’altare vi sembrerà uguale a quello di tante altre chiese. Ma camminando lungo la navata si svelerà l’inganno in tutta la sua meraviglia: la realtà apparente è solo un’illusione ottica, ideata dal Bramante per ovviare al problema della mancanza di spazio.

Church of Santa Maria at San Satiro On Via Torino, a stone’s throw from the Duomo, go inside and discover this place, which is a stroke of genius by Bramante. The building is known for its “simulated choir”, a masterpiece of Italian Renaissance prospective painting. In fact, on entering, you won’t notice anything strange, and the space behind the altar will seem the same as many other churches. But when you walk along the aisle, all the wonders of the deception will be revealed to you: apparent reality is just an optical illusion, conceived by Bramante to overcome the problem of lack of space.


Santuario di San Bernardino alle Ossa In pieno centro, a due passi da via Larga, in piazza Santo Stefano, si trova questa chiesa, nata nel 1127 come ospedale per i lebbrosi e cimitero per accogliere i corpi di quanti morivano a causa della malattia. Con il passare del tempo fu costruita una camera annessa alla chiesa in cui conservare le ossa dei defunti, per fare spazio all’interno del cimitero. Così nacque l’ossario, le cui pareti sono composte da vetrine contenenti teschi, dal pavimento al soffitto. Un effetto strabiliante è assicurato. Fornace Curti Le sue origini risalgono al XV secolo, quando al servizio degli Sforza produsse le formelle per la Certosa di Pavia e l’Ospedale Maggiore. Nel corso dei secoli dalle Colonne di San Lorenzo ha cambiato varie volte sede fino a quella odierna in via Tobagi. è l’ultima fornace a Milano ancora attiva che produce argilla ma anche un luogo di pace in cui rifugiarsi per rilassarsi. Foro Romano Sotto la città si trova l’antica piazza principale del centro cittadino di Mediolanum, il nome con cui veniva chiamata Milano in epoca romana repubblicana. Il foro si estendeva per 160 metri di lunghezza e 100 di larghezza, ma oggi è visitabile solo in alcuni tratti, nei sotterranei della Biblioteca Ambrosiana e della Chiesa di San Sepolcro. Questi ultimi, in particolare, sono stati da poco riaperti al pubblico a seguito di restauro. Potrete visitarli approfittando anche degli aperitivi in tipico stile romano organizzati nei sotterranei.

Sinagoga Centrale Before the nineteenth century in Milan there was no official place of worship for the Jewish community, except the small oratory on Via della Stampa. In 1982, the synagogue was built on Via Guastalla. The roof was struck during the bombing of 1943 and the entire building was almost destroyed, to be rebuilt and then restored in 1997. Sanctuary of San Bernardino alle Ossa Right in the center, not far from Via Larga, in Piazza Santo Stefano, this church was founded in 1127 as a hospital for lepers and a cemetery to accommodate the corpses of those killed by the disease. As time went by, a room was annexed to the church to preserve the bones of the deceased, to create space in the cemetery. This is how the ossuary was born. Its walls consist of glass cases containing skulls from floor to ceiling. Chills are guaranteed.

Fornace Curti Its origins date back to the 15th century when, at the service of the Sforza, it produced tiles for the Certosa of Pavia and the Ospedale Maggiore. Over the centuries, the Columns of San Lorenzo have changed location several times to arrive at today’s location in Via Tobagi. It is the last working kiln in Milan that still produces clay but it’s also a peaceful place to find refuge and relax. Roman Forum Under the city lies the ancient main square of the city center of Mediolanum, the name by which Milan was called in the Republican era. The forum extends for 160 meters in length and 100 in width, but today is only accessible in some sections, underneath the Biblioteca Ambrosiana and the Church of San Sepolcro. These last sites have recently been reopened to the public following restoration. You can visit them by taking advantage of the typical Roman-style aperitifs organized in the underground areas. ■

Migliaia di turisti di tutto il mondo conoscono questo centro semplicemente come Sharm ma in realtà si tratta di un insieme di nuclei turistici diversi, ciascuno con una propria personalità. a Habana, il ritmo lento del tempo. Malinconica e sensuale, romantica e selvaggia, decadente e provocante. La Habana, regina di Cuba - la Isla Grande del Caribe - non è solo la capitale storica di un’isola dai forti contrasti ma è anche uno stato d’animo. O meglio, una mescolanza di stati d’animo che irretisce chi si avventura per le sue calle, nelle sue piazze o lungo il suo Malecón. Il nucleo urbano vero e proprio consiste in tre quartieri, la Habana Vieja, il Centro Habana e il Vedado, di cui il primo è dal 1982 “patrimonio cultural de la humanidad”. Antico centro coloniale, la Habana Vieja affonda le sue radici nel ‘500 e gli edifici recuperati alle ingiurie del tempo paiono sonnecchiare sotto il

sole del Caribe sospendendo il fascino del passato in un eterno presente. Dalla Plaza de Armas alla Plaza de la Catedral, dalle case con le verande in legno colorato e ferro battuto alle botteghe odorose di spezie, fino alle mitiche auto, tutto qui riporta al ritmo lento di un modo di vivere refrattario alla modernità, nonostante l’incedere di un turismo crescente. Il Vedado, fiorito negli anni ‘50, è il quartiere degli uffici, dei negozi, dei ristoranti, dei caffé trendy, dei locali notturni e dei grandi alberghi, quasi tutti affacciati intorno alla Rampa, quella fetta di strada chiamata “Calle 23” che dal lungomare, il Malecón, risale verso la collina. Tutto è musica qui, salsa, son e reggaeton accompagnano lo scorrere delle ore in una danza ancheggiante dall’alba al tramonto. Non è raro imbattersi in improvvisati concerti negli angoli delle strade o nelle piazze de La Habana: il ritmo salsero conquista e seduce mescolando l’esuberanza dell’Africa con le sensuali movenze caraibiche. Un cocktail alla leggendaria Bodeguita del Medio o al Floridita rappresentano tuttora una tappa obbligata per respirare tutta l’atmosfera della città anche se, forse, sorseggiare un tramonto lungo il Malecón al ritmo dei propri pensieri è il modo più intimo per carezzare la sua autenticità.

Pinar del Rio and the natural beauty of the North The most northwestern province of Cuba is a succession of wild landscapes that invite people to dive into nature and forget about urban civilization. Pinar del Rio hosts two of the six Unesco World Heritage Biosphere Reserves on the island. A cocktail at the legendary Bodeguita del Medio or the Floridita is still an obligatory stop for those who want to breathe in all the city’s atmosphere. stato chiamato il “Paradosso di Gutenberg”. Johannes Gutenberg sei secoli fa crea la tecnologia (i caratteri mobili per la stampa) che moltiplicherà le copie dei libri e riempirà gli scaffali pubblici e casalinghi. La televisione invece nasce come un flusso continuo con programmi a orari vincolati, sia quotidiani (news, rubriche, fiction, quiz) sia settimanali (talk show, serata al cinema, magazine, ecc.). Ma ora la TV riempirà gli scaffali, come fanno libri e dischi. La TV sta vivendo il paradosso di esser nata come flusso continuo e di evolversi in singoli “volumi da scaffale”. Per questo cambia anche il nome, diventa Video on demand (VOD). Come il libro, che è un medium “a richiesta”: vado in libreria (di mattoni o online), scelgo dei volumi, li porto alla cassa e pago. Ora posso fare lo stesso con la TV “spezzettata” in tanti volumi, cioè in tanti video. Lo faccio on-line, sul web, come prima lo facevo off line, andando nei negozi di Blockbuster. I fornitori di Video on demand sono tutti i broadcaster classici, quasi tutti gli operatori del Web (Apple,

Amazon, Google, ecc.) e gli “streaming service” che nascono solo per il VOD, come Netflix, Infinity e Hulu. Propongono e producono film, serie televisive, documentari, programmi di successo, spesso in abbonamento con super sconti. Alcune piattaforme di VOD offrono la possibilità di scaricare i video nel proprio pc, tablet, smartphone o smart tv, per rivederli senza rimanere connessi a Internet. Il VOD farà scomparire la televisione di flusso, come molti temono? Si può ormai dire che la TV live, di flusso, non scomparirà. Anzi riacquisterà la sua natura originaria, sarà letteralmente televisione (visione da lontano). Sarà sempre il mezzo che porterà sui nostri schermi gli eventi live, primi fra tutti i match sportivi, i concerti e spettacoli memorabili, le dirette da eventi unici.

t was called the Gutenberg Paradox. Six centuries ago, Johannes Gutenberg created the technology (movable characters for printing) to make mul-

tiple copies of books that would fill bookshelves in public structures and private homes. Television, on the other hand, began as a continuous stream of programs with fixed timetables, both daily (news, journalism, fictional shows, quizzes) and weekly (talk shows, movie night, magazines, etc.). But now TV will fill the shelves, just as books and recordings have done. TV is experiencing the paradox of being born as a continuous stream and evolving into individual “shelf editions”. That’s why the name is also changing and becoming Video on Demand (VOD). As with a book, which is an “on demand” medium, I go to the bookstore (physical or online), I choose the volumes, I take them to the cashier and pay. Now I can do the same with TV, “broken up” into so many volumes, that is, into so many videos. I do it online, on the web, as I used to do offline, by going to Blockbuster stores. Video On Demand providers are all classic broadcasters, almost all webmasters (Apple, Amazon, Google, etc.) and streaming services that are only for VOD, like Netflix, Infinity and Hulu. They propose and produce films, TV series, documentaries, and successful programs, often offering subscriptions at super discounts. Some VOD platforms let you download videos to your PC, tablet, smartphone or smart TV, so you can watch them again without being connected to the Internet. Will VOD make streaming television disappear, as many fear? We can say that by now, live streaming TV will not disappear. In fact, it will return to the way it once was, and literally be “tele-vision” (vision from afar). It will always be the medium that will bring live events to our screens, first of all the sports matches, memorable concerts and shows, the live direct broadcasts of unique events. ■

a ispirato artisti, innamorati e lupi mannari. Ci mostra sempre la stessa faccia, ma cambia aspetto continuamente. È sempre lì. È un po’ come se fosse il nostro cagnolino al guinzaglio. Fedele, la luna ci segue incessante da miliardi di anni nel nostro viaggio attorno al sole. Ma il suo non è un ruolo da dietro le quinte. Senza di essa, la vita probabilmente non si sarebbe sviluppata sulla Terra. Perché la luna ci influenza eccome, e non stiamo parlando di astrologia. Il nostro satellite indubbiamente fa sentire la sua presenza, provocando le alte e basse maree: le acque dei mari e degli oceani periodicamente si gonfiano e si abbas-

sano, lungo la direzione terra-luna, anche ogni 6 ore, soprattutto vicino le coste e fino a modificare il loro livello anche di 15 metri. Inoltre, la Terra è una vettura piuttosto stabile nella sua corsa intorno al sole proprio grazie alla luna: il nostro pianeta viaggia “storto” in quanto l’asse di rotazione è inclinato di circa 23 gradi, e questo valore è mantenuto costante dalla presenza della luna. Grazie a questo, si ha il susseguirsi regolare delle stagioni mentre la Terra volge il suo cammino annuale attorno al sole. Eppure la luna si sta allontanando da noi: poco più di 3 cm all’anno. Appena nata, 4.5 miliardi di anni fa, era almeno 10 volte più vicina. Un allontanamento progressivo dovuto alle forze di marea che lei stessa esercita e che da un lato rallentano la Terra, dall’altro

spingono la luna su orbite più distanti da noi. Se perdessimo il nostro satellite, la geologia e il clima terrestri cambierebbero pesantemente. Siccome l’asse di rotazione della terra non sarebbe più stabile e le maree cesserebbero, le calotte polari potrebbero scivolare verso l’equatore, mentre al contrario le masse d’acqua degli oceani si dirigerebbero verso i poli. Un rimescolamento che potrebbe alterare, fino a cancellare, le correnti atmosferiche e quelle marine (come la corrente del Golfo) con conseguenze pesanti sulle varie forme di vita. Ma possiamo stare tranquilli perché i tempi scala sono astronomici: servono giusto qualche miliardo di anni. Magari per quell’epoca l’umanità sarà riuscita a migrare su un altro pianeta. Einstein disse “Mi piace pensare che la luna è lì, anche se io non guardo”. Lei c’è e ci sarà. Godiamoci il chiar di luna, anche a occhi chiusi.

he has inspired artists, lovers and werewolves. She always shows the same face, but constantly changes. She’s always there. She’s a little bit like our dog on the leash. Loyally, the Moon has followed us unceasingly for billions of years on our journey around the Sun. But hers is not a behind-the-scenes role. Without her, life would probably not have developed on Earth. Because the Moon influences us. And we are not talking about astrology. Our satellite undoubtedly feels her presence, which causes the high and low tides: the waters of the seas and oceans periodically rise and fall along the Earth-Moon direction, even as much as every 6 hours, especially near the coasts and up to as much as 15 meters in variation. Moreover, Earth is a fairly stable vehicle in its race around the Sun thanks to the Moon: our planet travels in a “crooked” fashion as its rotation axis is inclined by about 23 degrees, and this value is kept constant by the presence of the Moon. Thanks to this, there is the regular succession of

seasons while the Earth is turning its annual course around the Sun. Yet the Moon is moving away from us - just over 3 cm a year. Born barely 4.5 billion years ago, it was at least 10 times closer then. This progressive retreat is due to the tidal forces that she herself exerts and that, on the one hand, slow down the Earth, and on the other, push the Moon on orbits that are more distant from us. If we lost our satellite, geology and the Earth’s climate would change drastically. Since the Earth’s rotation axis would not be more stable and the tides would collapse, the polar ice caps could slide to the equator, while, on the other hand, the ocean masses would go toward the poles. This kind of mix up could alter, to the point of annihilation, the atmospheric and marine currents (such as the Gulf current) with heavy consequences on the various life forms. But we can calm down because the time scale is astronomical: it will only take a few billion years. Maybe by that time, humanity will have been able to migrate to another planet. Einstein said, “I like to think that the Moon is there even if I am not looking at it.” She is there and she will be there. Let’s enjoy the Moon’s light, also with our eyes closed. ■

La nascita della comunicazione moderna 1890-1957” ripercorre la storia della più moderna forma di approccio al pubblico che è anche la ricostruzione sia dell’evoluzione di sempre più sofisticate tecnologie e nuovi media (dal manifesto, alla targa di latta, dall’illustrazione delle confezioni alla radio fino alla televisione), sia del mutare del gusto del pubblico.

In 2.500 mq di spazio sono raccolti circa 300 oggetti unici di inestimabile valore per seguire le tappe salienti di un viaggio prima nelle pieghe dell’immaginazione dell’umanità poi tra quelle, ben più sconosciute e ardue, del mondo oltre il globo terrestre. Oggetti provenienti direttamente dai programmi spaziali americani e russi come il veicolo lunare Saturn V che lanciò verso la Luna 24 astronauti.

Here is the most complete itinerant show (already visited by 3 million persons) dedicated to space discovery. It has been reconstructed through the stories of the voyages and explorations conducted by NASA and by the Russian space agency RKA - Roscosmos. Some 300 priceless and unique artifacts have been united in a space of 2500 m2 to illustrate the main stages of a voyage that was born in the scenarios of the human mind and was subsequently carried out in the challenging and unknown ambit of the universe beyond the globe of the planet Earth. Due anni dopo la creazione dell’Opificio Golinelli, polo educativo e culturale voluto dalla Fondazione Golinelli, sorge un nuovo spazio di 700 mq, il Centro Arti e Scienza Golinelli, progettato per ospitare poliedriche iniziative a cominciare dalla mostra “Imprevedibile, essere pronti per il futuro senza sapere come sarà”. L’evento guarda al futuro indagato attraverso il confronto tra opere di artisti italiani e stranieri ed exhibit scientifici, in un’interazione tra arte e scienza, a cui la Fondazione riserva uno sguardo particolare attenzione sin dal 2010 nella convinzione che il loro “dialogo” possa innescare nuove forme di conoscenza. Il Museo dell’Ara Pacis ospita la mostra “Hokusai. Sulle orme del maestro”, dedicata al pittore attivo fra la fine Settecento e la metà dell’Ottocento che, con le sue immagini del mondo fluttuante, influenzò grandi artisti parigini quali Manet, Toulouse-Lautrec, Van Gogh e Monet. In collaborazione con musei di Parigi, Berlino, Barcellona e New York e parte del progetto mondiale “Picasso-Méditerranée 2017-2019” che in tre anni prevede oltre 60 esposizioni internazionali, la mostra allestita alle Scuderie del Quirinale “Pablo Picasso. Tra Cubismo e Neoclassicismo 1915-1925” rende omaggio a uno dei pilastri indiscussi dell’arte moderna in occasione del centenario del suo viaggio con Jean Cocteau, in Italia, che, con le sue sollecitazioni pompeiane, rinascimentali e neoclassiche influì in modo significativo sulla sua ricerca artistica. Il complesso del Vittoriano, infine, apre le porte a una sessantina di opere di Claude Monet. Si tratta di lavori conservati dall’artista fino alla morte presso la sua abitazione e in seguito donate dal figlio al Musée Marmottan Monet, opere, spesso sconosciute al grande pubblico, che ripercorrono tutta la produzione artistica del padre dell’Impressionismo. The Ara Pacis Museum hosts the “Hokusai show. Following the footsteps of the maestro”, it is dedicated to the artist who was active between end-18th and mid-19th centuries, and whose images of a floating world influenced great Parisian artists such as Manet, Toulouse Lautrec, Van Gogh and Monet. In collaboration with museums of Paris, Berlin, Barcelona and New York, it is part of the international “Picasso-Méditerranée 2017-2019” project that provides for exposition, in over 60 international institutions, of the show on view at the Scuderie del Quirinale, “Pablo Picasso. Tra Cubismo e Neoclassicismo 1915-1925”, an homage to one of the universally acknowledged columns of modern art on the occasion of the one hundredth anniversary of his trip, together with Jean Cocteau, to Italy where the influence of Pompeii, the Renaissance and neo-Classicism played a significant role in his artistic development. Finally, the Vittoriano opens its doors to approximately sixty works by Claude Monet. These are works that the artist kept at his home until his death and were subsequently donated by his son to the Musée Marmottan Monet. These works, many of which are not familiar to the public, retrace the entire artistic production of the father of Impressionism. Hokusai. a loro non è una pasta che si cuoce in un forno da pizza, ma le terrecotte che escono dall’Antica Fornace Mariani sono un vanto di famiglia e dell’Impruneta. La terra di questo paese toscano, rinomato fin dai tempi dei Della Robbia, è unica al mondo, tiene a sottolineare Angelo Mariani, figlio del fondatore dell’azienda nel 1914. “La struttura morfologica del terreno ricca di ferro e rame rende i nostri prodotti resistenti al gelo: una terracotta porosa che respira, dall’inconfondibile colore caldo, bella e famosa in tutto il mondo”. E non solo tegole, mattoni e grondaie che sono la caratteristica delle città toscane: dai tempi della macinazione della terra (con la macina tirata da un somaro) l’Antica Fornace Mariani ne ha fatta di strada, ma sempre nel profondo rispetto della tradizione e della materia prima, sfornando vasi, orci, conche e riproduzioni artistiche di famose opere d’arte. Un impegno portato avanti dai figli di Angelo, Luigi, Franco ed Enrico, nonché dal nipote Marco, i quali spiegano con

orgoglio e professionalità la procedura di creare terrecotte, dalla cava alla fornace, pronte per l’esportazione. La prima fu negli anni ‘50 negli USA, poi seguì il boom in Francia e Germania, poi la crisi. “Un tempo le decorazioni in terracotta erano il vanto di cortili, giardini, ville e palazzi - dice Enrico - con la globalizzazione e i cambiamenti di moda la produzione di terracotta si è ridotta, materiali alternativi e più economici hanno invaso il mercato e da 19 fornaci all’Impruneta siamo rimasti in 4”. Si aggiunga che non c’è protezione del marchio per scarsa lungimiranza delle amministrazioni. Quella della famiglia Mariani si è orientata sommando innovazione alla tradizione, vedi la collaborazione con una ditta di casse acustiche perché pare che l’elemento in cotto valorizzi la sonorità, oppure quella con aziende vinicole per tornare a mettere il vino in orcio, come già stanno sperimentando in Sudafrica e Cile. “Il nostro fiore all’occhiello rimane però la fornitura di 300 riproduzioni di vasi storici nella tenuta di Het Loo, residenza di caccia di William III d’Orange - informa Franco - e come lui dall’Olanda siamo sbarcati in Inghilterra quando negli anni ‘90 fu restaurato il Privy Garden di Enrico VIII ad Hampton Court, dove adesso sfoggiano le conche dell’Impruneta”. Chissà che il prossimo passo non sia Windsor. “L’importante è non perdere il contatto con la terra - ribadisce Luigi - nel senso che le cave non vengano soppresse per speculazioni

edilizie e che l’Associazione Fornaci Storiche protegga il marchio Impruneta come la nostra ditta cerca di proteggere quella creatività artigianale che ha reso la Toscana famosa nel mondo”.

heirs is no mixture to be cooked in a pizza oven, but the pottery that comes out of the Ancient Mariani Kiln, the pride of the family and Impruneta. The clay from this Tuscan town, renowned since the times of Della Robbia, is unique in the world, emphasizes Angelo Mariani, son of the founder of the company in 1914.. “The morphological structure of the soil rich in iron and copper makes our products resistant to frost: a porous terracotta that breathes, with its unmistakable warm color, beautiful and famous all over the world”. And not just the tiles, bricks and gutters that are so characteristic of Tuscan cities: from the time of grinding the earth (with the grindstone pulled by a donkey) the Ancient Mariani Kiln has made strides, but always with a deep respect for tradition and the raw material, producing pots, urns, basins and artistic reproductions of famous works of art. This commitment has been carried forward by the sons of Angelo, Luigi, Franco and Henry, as well as grandson Marco, who proudly and professionally explain the process of creating pottery, from the quarry to the kiln, ready for exportation. The first was in the 1950s in the US, followed by the boom in France and Germany, then the crisis. “At one time terracotta decorations were the pride of courtyards, gardens, villas and palaces - says Enrico -. With globalization and changing fashions, terracotta production has declined. Alternative and cheaper materials have invaded the market. Of the 19 kilns that were once in Impruneta, 4 are left”.

He adds that there is no trademark protection due to lack of foresight of the administrations. The Mariani family has been aiming at adding innovation to tradition. It is collaborating with a hearing aid company because it seems that the device made of terra cotta valorizes sound. Or with winemaking companies to go back to putting wine in urns, which they are already experimenting with in South Africa and Chile. “Our flagship is still the supply of 300 reproductions of historic vessels in the Het Loo estate, William III of Orange’s hunting lodge - says Franco - and like him, from Holland we landed in England in the 1990s when Henry VIII’s Privy Garden was restored at Hampton Court, where they now show off the basins made in Impruneta”. Who knows whether the next step might not be Windsor. “It’s important not to lose touch with the earth - Luigi reaffirms - in the sense that the quarries don’t vanish because of building speculation and that the Historical Kilns Association protects the Impruneta brand as our firm seeks to protect that artisan creativity that has made Tuscany famous in the world”. ■

ello stile di vita medio o stilmedio, che ho già definito in un precedente numero di questa rivista a partire dalla dieta mediaMediterranea, c’è anche il movimento. Se non ci si muove adeguatamente, seguire le indicazioni della piramide a l i m e n t a re universale

serve a poco. L’esercizio fisico è nel nostro Dna: per millenni ci siamo procurati il cibo con uno sforzo fisico quotidiano molto intenso. Oggi non è più così, ma il movimento rimane fondamentale. Allora, come per gli alimenti potremmo pensare a una piramide universale dei movimenti. Che, come per i cibi, si applica a livello locale (dove vivi) e personale (chi sei e cosa fai). Immaginiamola però ribaltata rispetto alla prima. Alla base, cioè in alto, ci sono i movimenti che dobbiamo fare con maggiore frequenza: camminare il più possibile, salire le scale invece di prendere l’ascensore, usare la bicicletta invece dei mezzi. Scendendo, dunque con una frequenza che diminuisce progressiva-

mente, ci sono gli sport aerobici: la corsa, il nuoto, gli sport di squadra con la palla… Poi c’è l’attività fisica più intensa come gli esercizi in palestra. Più in basso la sedentarietà, che spesso si lega al lavoro d’ufficio, allo stare davanti al video (tv o pc). Ora, provate a unire le due piramidi, quella degli alimenti e quella (ribaltata) dei movimenti. Vi accorgerete che, dove le due cuspidi si toccano, ci sono gli alimenti e i movimenti più dannosi: stare davanti alla tv e mangiare dolci. Ma la cosa che stupisce in questa unione di piramidi universali è la figura che viene fuori: una clessidra. Che rappresenta, fra gli altri elementi simbolici, anche il tempo, lo scambio, la misura. Così capiamo quanto sia importante il collegamento fra i due “vasi” comunicanti, alimenti e movimenti ovvero fra le due piramidi. È importante dunque combinare ed equilibrare i nostri nutrimenti con i movimenti. Mangiare bene senza muoversi o, viceversa, muoversi e mangiare male, non è molto salutare. Ma le due piramidi-vasi comunicanti degli alimenti e dei movimenti condividono anche un’altra cosa: il suffisso “menti”. Per arrivare allo stilmedio dobbiamo usare le nostre intelligenze. Pensateci, si può fare.

FOOD AND MOVEMENT, THE COMMUNICATING VESSELS OF WELLBEING Combining food and exercise in a balanced and intelligent manner is essential to achieving the ideal “average style” for a healthy and responsible existence: we just have to use our “minds”

n the average lifestyle, which I’ve already defined in a previous issue of this magazine starting with the average Mediterranean diet, there is also movement. If you don’t move enough, following the directions of the universal food pyramid is of little use. Exercise is in our DNA: for millennia we

have been procuring food with a very intense daily physical effort. This is no longer the case today, but movement is still crucial. So then, as with foods, we could create a universal pyramid of movements. That, as with foods, applies locally (where you live) and personally (who you are and what you do). Let’s imagine it overturned with respect to the first one though. At the base, that is, on the top, there are the movements that we have to do most often: walk as much as possible, climb the stairs rather than take the elevator, ride a bicycle instead of using vehicles. Going down, with a frequency that decreases progressively, there are the aerobic sports: running, swimming, team sports with a ball... Then there is the most intense physical activity like exercising at the gym. Lower down is sedentariness, often tied to office work, to sitting in front of the video (TV or PC). Now, try joining the two pyramids, for foods and for (overturned) movements. You’ll find that where the two cusps touch, there are the most harmful foods and movements: sitting in front of the TV and eating sweets. But the amazing thing about this union of universal pyramids is the figure that emerges: an hourglass. Which represents, among other symbolic elements, also time, exchange, and measurement. So we understand how important the link between the two “communicating” vessels is, between foods and movements, or between the two pyramids. So then, it’s important to combine and balance our nutrition with movement. Eat well without moving or, conversely, moving and eating badly, is not very healthy. But the two pyramids-communicating vessels of food, or “aliment”, and “movement” also share another thing: the suffix “ment” as in ment-al ability. We need to use our minds, our intelligence, to achieve a good lifestyle. Think about it. You can do it. ■

aschere ancestrali, uomini ricoperti di pelli che saltano ritmicamente facendo risuonare fragorosi campanacci; sono arrivato nel cuore della Sardegna, nella sua parte più autentica, ricca di cultura e antiche usanze. Lungo le vie di questi piccoli centri i Boes, i Merdules e i Mamuthones scandiscono i propri passi con cadenza sapiente, rievocando riti misteriosi e danze propiziatorie. È solo l’antipasto del mio viaggio in Barbagia. Accolto dal popolo dei centenari, vado alla scoperta delle arti e dei mestieri che ancora oggi si tramandano di padre in figlio. Il mio sguardo si posa su un particolare macchinario in pietra e legno, utilizzato in passato per lavorare il tessuto di orbace con cui sono realizzati i tipici costumi sardi: chiedo lumi ai presenti e mi spiegano che son dinanzi a una Gualchiera, uno degli ultimi testimoni di un’epoca passata che rivive nei nostri giorni autunnali. I racconti degli anziani accompagnano la mia giornata tra un sorso di buon vino Cannonau e una fetta di formaggio pecorino con pane carasau, eccellenze alimentari di una terra genuina. La generosità e l’accoglienza dei miei nuovi amici mi spinge a voler conoscere meglio la storia e le origini di questa splendida

isola che mi ha ormai conquistato; scopro così i segreti e le pagine di una cultura sconfinata, tra gli appassionanti racconti del premio Nobel Grazia Deledda e le immagini dei quadri di Antonio Ballero. Il mio week end in Barbagia sta per terminare, ma ho ancora un po’ di tempo per dedicarmi alla natura e all’archeologia; il villaggio nuragico di S’Urbale e il santuario di Abini sono le ultime tappe del mio intenso viaggio, tracce indelebili di un’epoca misteriosa che ha segnato la civiltà della Sardegna migliaia di anni fa e che oggi arricchiscono il mio bagaglio. Tutto questo l’ho scoperto con Autunno in Barbagia, un viaggio che dura da settembre a dicembre, tra 32 paesi alla scoperta di buon cibo e antichi saperi. Vi si sono dati appuntamento anche quelli più temuti della Terra, e - udite udite - si possono anche toccare. Naturalmente in compagnia di un esperto, per non incorrere in disavventure. Il più grosso, ma non il più pericoloso, è la Teraphosa Blondi, o Tarantola Golia, che può raggiungere i 30 centimetri e può pesare fino a 170

grammi. Vederlo da vicino è veramente un atto di sfida alla paura. Restando nel campo delle taglie XXL occorre farsi coraggio e vedere da vicino l’insetto stecco gigante (il Bacillus rossius Rossi) che, disteso, sfoggia zampe di mezzo metro. Oppure il maxi scarabeo tricorno nato di recente dopo ben due anni di gestazione e che è già diventato la mascotte del museo, “parente” di quel Scarabeo Ercole imbalsamato che accoglie i visitatori all’ingresso dell’esposizione. Questi piccoli (e per qualcuno adorabili) “mostri” sono ammirabili ad Esapolis di Padova, il più grande insettario d’Europa, perla del “MicroMegaMondo”, il sistema museale padovano dedicato agli insetti e alle farfalle ideato da Enzo Moretto, entomologo di fama internazionale che cominciò a far parlare di sé creando qualche anno fa a Montegrotto Terme la “Butterfly Arc”, la casa dedicata alle farfalle. Oggi una delle attrazioni più visitate delle terme euganee. Esapolis è nato nel 2008 nell’ex sede dell’Istituto Bacologico, con la partnership decisiva della Provincia di Padova. Tutto partì dall’esposizione di una collezione di bachi da seta, erano il patrimonio della stazione bacologica nazionale (tuttora

attiva) e costituiscono uno “storico” sui bachi da seta (oltre cento le “razze” presenti) a cui oggi sono molto interessati anche i cinesi, primi produttori al mondo di seta. Che dal mondo degli insetti la ricerca tragga formidabili indicazioni per sviluppare nuove tecnologie lo testimoniano i pannelli solari dei satelliti realizzati traendo ispirazione dagli occhi delle falene, o i robot progettati osservando gli insetti che camminano sulle pareti, o i sistemi fotonici realizzati con le nano tecnologie partendo dallo studio del materiale delle corazze iridescenti di certi coleotteri. Ad Esapolis si esplorano i tanti segreti del mondo degli insetti, che riservano molte sorprese. Si pensi ai cosiddetti insetti-gioiello con le loro corazze color oro o lucenti come certi smalti e con le loro colorazioni e le loro strutture che li rendono degni di un atelier; alle mantidi-orchidea o a quelle che assomigliano a una foglia secca per mimetizzarsi con la vegetazione; agli insetti “fossili”, ai segreti delle api. Insomma, Esapolis è un’avventura da non perdere. Anche per capire che gli insetti più che “mostri” sono dei piccoli e affascinanti amici dell’uomo.

ecidedly not recommended for arachnophobes! Because Esapolis is a spider’s nest, many of which are large and hairy. Here you can find some of the most feared ones on Earth, and - hear ye, hear ye - you can also touch them. In the company of an expert, of course, so that there aren’t any unfortunate mishaps. The biggest, but not the most dangerous, is the Teraphosa Blondi, or Tarantola Golia, which can reach up to 30 centimeters and weigh up to 170 grams. Seeing it up close is truly an act of facing your fears.

Staying in the XXL size range, you need to gather your courage and have a close look at the giant stick insect (the Bacillus Rossius Rossi), which, when stretched out, has legs half a meter long. Or the maxi rhinoceros beetle born in the past few weeks after two years of gestation and that has already become the museum’s mascot, “relative” of that stuffed Hercules Beetle that welcomes visitors at the entrance to the exhibit. These little (and for some, adorable) “monsters” can be admired at Esapolis in Padua, Europe’s largest insect habitat, pearl of “MicroMegaMondo”, the Padua museum dedicated to insects and butterflies created by Enzo Moretto, an internationally renowned entomologist who began to draw attention a few years ago when he created the “Butterfly Arc” in Montegrotto Terme. Today, it is one of the most visited attractions in the Euganean Hot Springs. Esapolis was created in 2008 in the former headquarters of the Bacological Institute, with the decisive partnership of the Province of Padua. It all started with the exhibition of a collection of silkworms, patrimony of the national bacological station (still active today), and a “historic” collection of silkworms (over one hundred “breeds”). Today, the Chinese, the world’s first silk producers, are also very interested. The fact that from the world of insects researchers find formidable indications to develop new technologies, with testimonials in the solar panels of satellites which draw inspiration from the eyes of moths, or robots designed by observing insects walking on walls, or photonic systems made with nano-technologies starting with the study of the material on the iridescent shells of certain beetles. At Esapolis, the many secrets of the world of insects are explored, and hold all kinds of surprises. Think of the so-called jewel-insects with their gold-colored or shiny shells, like some enamels. Their colors and structures make them worthy of a fashion house. And the orchid-mantises that look like a dry leaf to mimic vegetation. Or the “fossil” insects, and secrets of the bees. In short, Esapolis is an adventure not to be missed. Also to understand that insects, more than “monsters”, are small and fascinating friends of human beings. ■

e are in Chianti Rufina, a few kilometres from Florence, at Castello del Trebbio, in admiration of the 13th century manor that dominates the estate. The owners are here to tell us about this beautiful place: Stefano Casadei and Anna Baj Macario, a couple in work and in life, directly involved in all the activities both here at Trebbio and in the other family businesses of the D Casadei group. How many different things do you do? “Several, indeed – Anna answers -: here at Trebbio we produce wine (excellent by the way, I’m sipping a Lastricato Chianti Rùfina docg, Ed.), a typically Tuscan EVO oil, pure saffron (we are part of the founders of the producers’ association Consorzio delle Colline Fiorentine), and spelt. We have accommodation obtained from the restoration of the old farm houses spread out on the property: these are the residences of our Agriturismo; we have a Restaurant where we can also organise events and weddings; we run a Farm Shop where we sell all the products from the D Casadei businesses, including a line of food products and one of cosmetics, both BioIntegral”. BioIntegral? “We have always been sensitive to issues regarding territorial protection - Stefano says -, respect for nature, an agriculture made of growing in an environment that is as intact and protected as possible. With time we have transformed this biodynamic and organic approach into a real ethical protocol and into a programme manifesto:we have named it BioIntegral, and in D Casadei it is a sort of Bible, woe if you depart from it!”. Anna, what is actually BioIntegral here at Trebbio? “The restaurant kitchen, that uses raw materials from our kitchen garden and from organic suppliers

from the local area; the photovoltaic energy that we produce in-house; some aspects of the vinification process, among which the passage in amphora of our De’ Pazzi, an interesting Supertuscan of sangiovese, merlot and shiraz; the irrigation system that only uses water from our wells. Every single action taken and decision made is BioIntegral: by now our way of thinking is exclusively BioIntegral, and so is our way of working. I’d say BioIntegral is our way of living”.

Bismetilthyometano e terfezie: non è tutt’oro quel che brilla

on il declinare dell’estate inizia la stagione dei tartufi ricercati dai buongustai che possono permetterseli perché i prezzi sono diventati stratosferici. Ciò nonostante sono aumentati i ristoranti e le trattorie che offrono specialità al tartufo e si sono moltiplicati i prodotti aromatizzati al tartufo o presunto tale. Questo fenomeno deve mettere in sospetto i consumatori. Infatti in natura la disponibilità di tartufi è rimasta invariata, risentendo da un anno all’altro degli alti e bassi stagionali. Non di meno oggi, accanto ai ristoranti di profilo più alto e di solida tradizione, a proporre piatti al tartufo sono un po’ tutti, dalla trattoria di livello medio, alla tavola calda, all’osteria, alla pizzeria. C’è qualcosa che non quadra. Specie se si considera che il tartufo non si può coltivare su vasta scala e che la natura è molto avara

e restia a cedere questi suoi gioielli. In più non esiste nessun segnale che siano stati individuati nuovi vasti giacimenti di tartufi. E allora? è presto detto: dietro al prezioso tuber magnatum pico si cela un inganno, anzi una truffa bella e buona. Provate a immaginare di acquistare un diamante, e di pagarlo come tale, e poi di ritrovarvi con un volgare pezzo di vetro. è lo stesso rischio che oggi può capitare a chiunque ordini un piatto al tartufo al ristorante, per fortuna non in quelli seri, che sono la maggior parte. Le principali insidie si nascondono soprattutto nei prodotti cosiddetti “tartufati”, oggi in gran voga, che hanno ormai colonizzato le specialità più disparate e astruse: oli, salumi, formaggi, paste alimentari, snack vari, prodotti dolciari, salse a non finire. Non ci meraviglieremmo se venisse proposto anche il caffè espresso al tartufo, ma forse qualcuno ci ha già pensato. Ma come si fa per dare all’olio o a un altro alimento l’aroma del tartufo? Basta insaporirlo con una sostanza aromatica che in natura è contenuta in proporzioni equilibrate nello stesso magnatum pico. Si tratta del Bismetilthyometano, ricavato sinteticamente dagli idrocarburi. Anche le lamelle che si vedono spuntare nei piatti e nei prodotti confezionati provengono in massima parte da un falso tartufo, le terfezie, messe in bella mostra per carpire la buona fede del consumatore. Caratteristica comune di questi tartufi fasulli, importati dal Marocco e dai Paesi del Maghreb ma soprattutto dalla Cina, è la somiglianza col tartufo vero mentre appartengono a tutt’altra specie vegetale e sono del tutto insapori. Come possiamo tutelarci e scoprire il trucco? Basta un semplice accorgimento. Se un piatto di pasta asciutta, un uovo, un carpaccio o un’altra vivanda profumano già di “tartufo” prima di venire cosparsi di lamelle, si corre il rischio che siano stati insaporiti con olio aromatizzato al Bismetilthyometano. Ma si rischia pure che il tartufo di copertura sia fasullo, appunto una terfezia. Basta un assaggio per rendersi conto della sua insipidezza anche se la pasta sottostante ha un sentore tartufaceo, comunque troppo penetrante e persistente e ben diverso da quello sottile e armonioso del tartufo vero. Agli intenditori questa differenza non sfugge mai. In ogni caso sospetto si può rimandare al mittente il piatto. Anche perché, se il

conto lievita a causa del tartufo, quello vero, pazienza, semel in anno... Ma se a farlo alzare è quello taroccato allora il discorso è molto diverso.

ith summer coming to an end, the season of truffles is beginning, the truffles that are so sought after by the gourmets who can afford them, because prices have become stratospheric. Nevertheless, restaurants and trattorias that offer truffle specialties have increased and truffle flavored or truffled products have multiplied. This phenomenon has made consumers suspicious. In fact, the availability of truffles remains unchanged, and subject, from one year to another, to seasonal highs and lows. Nevertheless, apart from the higher end and solidly traditional restaurants, almost everyone is serving truffle dishes, including the mid-range trattoria, the buffet, the tavern, and the pizzeria. Something isn’t right. Especially if we consider that the truffle cannot be cultivated on a large scale and that nature is very miserly about giving up its treasures. Moreover, there is no evidence that the vast new truffle patches have been found. So? As the saying goes: behind the precious tuber magnatum pico lies a deception, on the contrary, a true and proper scam. Try to imagine buying a diamond, and paying the price of a diamond, and then finding yourself with a vulgar piece of glass. The risk is the same for anyone today ordering a truffle dish at

a restaurant, fortunately not in serious restaurants, which most of them are. The main pitfalls lie hidden in so-called “truffle” products, which are very popular these days, and extend to the most varied and abstruse specialties: oils, salamis, cheeses, pastas, snacks, confectionery, sauces and it doesn’t end here. We wouldn’t be surprised to hear it included espresso coffee, but maybe someone has already thought of that. But how do they give oil or other foods the aroma of truffle? Just flavor it with an aromatic substance contained in nature in balanced proportions in the same magnatum pico. It is Bismethylthiomethane, synthesized from hydrocarbons. Even the grated pieces you see in the dishes and packaged products come primarily from a false truffle, the terfezia, put nicely on show to purloin the consumer’s trust. The common feature of these fake truffles, imported from Morocco and the Maghreb countries and above all from China,

is their resemblance to the real truffle, while in fact they belong to an entirely different plant species and are completely insipid. How can we protect ourselves and detect the scam? It only takes a simple precaution. If a plate of dry pasta, an egg, a carpaccio or another food item already smells of “truffles” before anything has been put on the food, there is a risk that they are flavored with Bismethylthiomethane flavored oil. But there is also the risk that the truffle topping is fake, just a terfezia. It only takes a taste to sense its insipid quality even if the pasta below it has a truffle flavor, though too penetrating and persistent and quite different from the subtle and harmonious flavor of the real truffle. Connoisseurs can always spot this difference. In any suspicious case, the dish can be sent back to the kitchen. Also because, if the cost of the bill goes up because of the truffle, the real one, ah well, once a year one is allowed to go crazy... But if the fake truffle raises the price, then it’s a very different matter. ■

Preparazione Per salsa alle marasche Mondate e lavate il porro, tagliate finemente la parte bianca, conservate le parti più esterne e verdi per altre preparazioni. Appassite il trito di porro nel burro. Sfumate con il brandy, mescolate bene e lasciate evaporare. Sfumate con l’aceto di mele, mescolate ancora e lasciate evaporare. Aggiungete 10 marasche denocciolate e il fondo di manzo, lasciate sobbollire fino a restringere della metà. Passate al frullatore e filtrate con colino fine. Regolate di sale e pepe, aggiungete il succo di yuzu e le rimanenti marasche intere. Per il morbido di patate Pelate le patate, lavatele e tagliatele a pezzi. Cuocete a vapore e passate al setaccio fine. In una casseruola, portare il brodo a bollore. Incorporate il parmigiano grattugiato e, successivamente, il brodo caldo. Versate a filo l’olio continuando a mescolare. Terminate con succo di yuzu e regolate di sale e pepe.

Per l’insalata di cavolo rosso Eliminate la costa centrale delle foglie del cavolo rosso. Lavate e asciugate bene le foglie, poi tagliatele a strisce sottili. In un’ampia ciotola condite le strisce di cavolo rosso con aceto di mele, sale, pepe e olio. Mescolate bene, coprite e lasciate a macerare per 30 minuti.

Per il morbido di patate 400 g di patate 60 ml di olio extravergine di oliva 70 ml di brodo vegetale 50 g di Parmigiano Reggiano 1 cucchiaio di succo di yuzu sale fine e pepe nero macinato Per l’insalata di cavolo rosso cavolo rosso aceto di mele olio extravergine di oliva sale fine e pepe nero macinato

dare sul fuoco fino a raggiungere quasi il punto di fumo dell’olio. Ponete le piume di maiale nella padella e rosolate bene su tutti i lati. La carne deve avere una bella crosta dorata esterna e l’interno deve essere rosato. Togliete la carne dalla padella e lasciatela riposare su una griglietta per 4 minuti. Eliminare il grasso della padella e deglassare con un poco di salsa all’amarena raschiando bene il fondo della padella, unite il contenuto della padella alla salsa all’amarena. Scaldate la salsa e conservate al caldo. Scaldate il morbido di patate. Scaloppate la carne. Ponete due cucchiai di morbido di patate al centro di ogni piatto, disponete le fette di carne sul morbido di patata. Nappate con la salsa di amarene e distribuite le amarene tra i quattro piatti. Terminate con il cavolo rosso.

Pour in the brandy, mix well and let it evaporate. Pour in the vinegar, mix well and let it evaporate. Add 10 pitted cherries and beef drippings, simmer until it is reduced to half. Put it in the blender and filter it with a fine sieve.Season with salt and pepper, add the yuzu juice and remaining whole Marasca cherries. For the potato purée Peel and wash the potatoes, and cut into pieces. Steam them and pass them through a fine sieve. Bring the broth to a boil in a saucepan. Stir the grated parmesan cheese into the potatoes, and then the hot broth. Pour in the oil, stirring constantly. Finish it off with yuzu juice, and season with salt and pepper.

For the red cabbage salad Remove the leaves from the central core of the red cabbage. Wash and dry the leaves, and cut them into thin strips. In a large bowl, season the red cabbage strips with apple cider vinegar, salt, pepper and oil. Mix well, cover and leave to marinate for 30 minutes.

Garnish and presentation Season the pork cuts with salt and pepper. Pour a tablespoon of oil into a pan and heat it up until the oil is nearly a smoking point. Put the pork ‘pluma’ cuts into the pan and brown well on all sides. The meat should have a nice golden crust on the outside and the inside should be rose pink. Remove the meat from the pan and let it sit on a grill for 4 minutes. Remove the fat from the pan and deglaze the meat drippings with a little cherry sauce, being sure to scrape the bottom of the pan well. Add the contents of the pan to the sour cherry sauce. Heat the sauce and keep it warm. Heat up the soft potatoes. Scallop the meat. Put two tablespoons of soft potatoes in the center of each plate, arrange the slices of meat on the soft potato. Drizzle with cherry sauce and distribute the cherries between the four plates. Finish off with red cabbage salad. e nella vostra esistenza regna troppa tranquillità, potrete ravvivarla facendovi entrare un nuovo piccolo amico, il furetto. Presente nella vita domestica fin dall’antico Egitto, questo simpatico mammifero, da sempre abituato ad essere parte della famiglia, saprà tenervi buona compagnia e riempirà la casa di allegria, oltre a darvi un bel po’ di preoccupazioni poiché la piccola creatura, che difficilmente arriva a pesare più di due chili, si comporterà per sempre con la stessa graziosa incoscienza di un cucciolo di umano. Il furetto infatti non ha la percezione del pericolo, si lancia da pericolose altezze, si insinua in irraggiungibili anfratti e, lasciato libero, non è minimamente in grado di garantire la sua incolumità. Occorre fare molta attenzione pertanto a cavi elettrici, sportelli aperti e prodotti chimici per uso domestico; la vivacissima bestiola sperimenta tutto, rosicchia e assaggia. Il furetto è un carnivoro, quindi è gradita la carne fresca in alternativa al cibo secco, croccantini a base di carne che contengano però una bassissima percentuale di carboidrati, con totale esclusione di cereali o frutta, alimenti questi tassativamente vietati. Perché quindi scegliere un fu-

retto come animale da compagnia? Il furetto sta riscuotendo sempre più consensi ed è facile acquistarlo in ogni negozio di animali: sembra essere un simpatico connubio fra le caratteristiche di devozione e affetto tipiche del cane, e la giocosità e l’esigenza di dormire del gatto. Il suo nome scientifico è Mustela putorius furo cioè ladro puzzolente. Il nome deriva da due caratteristiche: ladro poiché ruba e nasconde il cibo, puzzolente perché ha una ghiandola che secerne un particolare intenso odore. Problema quest’ultimo risolvibile con la sterilizzazione. Fra pregi e difetti forse il furetto tende a propendere verso i difetti, ma chi l’ha detto che non si possa volere un mondo di bene anche alle simpatiche canaglie?

Kept as a pet since the times of ancient Egypt, this endearing mammal, who has always been accustomed to being a part of the family, can really keep you company and fill the house with joy, as well as giving you a few worries. The little creature, who hardly weighs more than two kilos, will always behave in the same gracefully unaware way that human babies do. In fact, the ferret doesn’t perceive danger, it throws itself off dangerous heights, it creeps into inaccessible nooks and crannies and, if left free to roam, cannot guarantee its own safety in the slightest. Therefore, great care must be taken with electrical wiring, open doors and household chemicals; the lively little beast has to experience, chew and taste everything. The ferret is carnivorous, so fresh meat is welcome as an alternative to dry food, meatbased dry pet food, but with a very low percentage

of carbohydrates, and totally excluding cereals or fruits, which are strictly forbidden. So why choose a ferret for a pet? The ferret is becoming more and more accepted and is easy to buy in most pet stores: it seems to provide a nice mix between the devotion and attention of a dog, and the playfulness and need to sleep of a cat. Its scientific name is Mustela putorius furo, or, stinky thief. The name comes from two characteristics: a thief because it steals and hides food, smelly because it has a gland that secretes a particularly intense smell. This problem can be solved with sterilization. Between its virtues and its defects, perhaps the ferret tends to lean towards the defects, but who says that we can’t also love an endearing little rascal just as much if not more? ■

l suo nome compare nelle situazioni estreme, nelle sfide per pochi, nelle emergenze dove arriva quando gli altri fuggono. E da sempre accompagna gli italiani che amano la vacanza flessibile e agile. In tenda. Il marchio è una garanzia: Ferrino, l’azienda che dal 1870 realizza tende per montagna e tempo libero, ma anche tessuti sportivi, abbigliamento e attrezzature tecniche da sport. C’è una donna la cui forza è la calma dei nervi distesi al vertice di questo colosso che da Torino si affaccia in 40 Paesi del mondo. Anna Ferrino, discendente del trisavolo fondatore Cesare Ferrino, guida l’azienda da amministratore delegato con la serenità e il difficile equilibrio di una donna che sa indossare gli abiti di manager, moglie e mamma di una famiglia solida e dinamica. Il marchio Ferrino è arrivato sull’Himalaya, si è affacciato sui 14 ottomila del mondo perché era la tenda di Reinold Messner e ha assistito l’esploratrice Carla Perotti nella traversata del “mare della morte”, il deserto della Cina che spaventa anche i temerari. Ma la tenda Ferrino è anche la mitica canadese che porta gli italiani in vacanza. E Anna Ferrino preferisce tratteggiare la propria figura di manager

passando dal rapporto con la famiglia, dalla presenza delle donne nelle aziende, dalle sfide personali e professionali. Sulle quote rosa arriccia il naso perché, dice, la competenza non deve dipendere dal genere. Eppure la sua battaglia personale, condotta con discrezione ed equilibrio, è indirizzata a migliorare le condizioni della donna sul lavoro: “Bisogna aiutare chi è in una posizione più disagiata col supporto di strutture pubbliche alle quali per esempio affidare i bimbi”. Donna e manager, donna e mamma. Equilibrio sempre difficile da trovare. Anna Ferrino ha due figli e il problema se lo è posto. Affrontò il problema parlandone con loro, Enrico e Leopoldo. “Ragazzi, mi rendo conto che a volte vi dedico poco tempo e mi dispiace. Però ce la metto tutta”. I figli dalla mamma hanno ereditato anche il buonsenso. Risposero: “Non ti preoccupare, non vorremmo mai che tu rinunciassi al tuo lavoro, il tempo che ci dedichi forse è poco ma è di qualità. Quindi siamo contenti”. Sono i tifosi ultrà della mamma che le hanno consentito di alzare sempre di più l’asticella della sfida fra famiglia e lavoro. Quando si dice la formazione. Anna Ferrino entrò in azienda nel 2005, ma a 22 anni aveva già intrapreso un percorso di crescita. Il destino deviò la sua strada. Studiava lettere, indirizzo artistico, poi al terzo anno a cinque esami dalla laurea scelse il lavoro specializzandosi in marketing. Si fece le ossa in una tessitura francese in Nor mandia, poi dieci anni alla Columbia, colosso dello sportswear di Portland in Oregon, come agente distributore sul mercato italiano in virtù della delega affidata all’azienda di famiglia. Anna Ferrino da allora non si è più fermata.

She takes it on by talking about it with them, Enrico and Leopoldo. “Boys, I realize that sometimes I don’t dedicate much time to you and I am sorry about that. Believe me, I am doing my best”. As children of their mother, her sons have inherited her good sense. They answered, “Don’t worry, we would never want you to renounce your work. It may be that the time you dedicated to us is limited, but it is always of the best quality. So, we are happy”. These enthusiastic fans of their mother have enabled her to continue to raise the bar of the challenge between the family and her work. That is the real meaning of formation. Anna Ferrino entered the company in 2005 but, at 22 years of age, had already undertaken a path for growth. Fate changed her destiny. She was studying literature with an artistic orientation but in her third year, with just five exams to complete her degree, she opted for work and took up a specialization in marketing. She did a stint in a French textile plant in Normandy, then ten years with Columbia, the sportswear colossus in Portland (Oregon) as their distribution agent for the Italian market by virtue of the commission entrusted to the family company. VASILIJ VASIL’EVICH KANDINSKIJ, VASILIJ VASIL’EVICH KANDINSKIJ, NOTE DI COLORE! COLOR NOTES! Dopo aver fatto visita al MUDEC di Milano, sono rimasta colpita dalle opere di Kandinskij, che già apprezzavo molto. Ho pensato che mi sarebbe piaciuto approfondire la conoscenza di questo grande artista che ama i colori come li amo io e la musica come la amo io. Comincio dalla sua città Natale, Mosca. Tra le opere più famose: Mosca Piazza Rossa-1916. Un paesaggio urbano dal sapore fantastico in cui l’artista rappresenta la sua visione della città: sono riconoscibili alcuni elementi architettonici che si mescolano al volo degli uccelli e al grande arcobaleno. Esplode il suono forte finale di un’immensa orchestra e Mosca risuona vittoriosamente! Cerco subito un volo da Milano. Volo diretto con Meridiana MXP-DME. Perfetto, sono una Frequent-Flyer e con questo volo accumulo 250 Avios: “essendo iscritto al meridiana Club, bado anche a questo aspetto”. Parto alla scoperta del magnifico personaggio della storia dell’arte Russa.

After I have gone to visit the “MUDEC in Milan” and I was really amazed about Kandinskij operas which already impressed me a lot in the past, I though I would like to get to know better about this great artist loving colors and music as I love them. The start is his home town, Mosca. Among the most famous operas: Mosca Red Square-1916. An urban and fantastic landscape representing the artist vision: some architectural elements mixed with the birds flight and the great rainbow. At the end a sound explosion coming from an orchestra playing a victoriously Mosca! I search soon for a flight from Milano to Mosca. A direct flight MXP DME by Meridiana is really perfect, in addition as a frequent flyer I may accrue 250 Avios “I am member of the Meridiana Club and I pay attention to exploit”. So now I leave to know the excellent character of the russian art history.
