PAP SQUARES WITH SPINACH TOPPING Ingredients to make Pap in the microwave: 750 ml maize meal 7 ml salt 500 ml cold water 1,25 L boiling water Ingredients for Spinach Topping: 3 tbsp of butter/margarine 1 chopped onion 150 g sliced mushrooms 1 bunch chopped spinach Salt and pepper to taste 250 ml cream Oil for frying Micro herbs for serving

Method: 1. Combine the maize meal and salt with 500 ml cold water in the Microwave Rice Maker Large bowl, mix with a Paddle Scraper. 2. Add 1 L boiling water to the mixture and stir. 3. Cover with Rice Maker inner and outer cover and push down securely. 4. Place in the microwave and cook on high for 10 minutes. (Cooking time may vary as per your microwave’s power.) 5. Remove from microwave and stir the mixture to break it up. 6. Add 250 ml boiling water and stir, place in the microwave on high for another 10 minutes. (Add less water for a stiffer texture)

7. Spoon pap mixture into a greased shallow dish or baking tray and press down. Allow to cool and set, at least 1 hour. 8. Cut pap into squares and shallow fry in hot oil. Drain on kitchen towel and arrange on a serving platter. 9. Topping: melt butter in a large pan, sauté onions until transparent, add mushrooms and spinach, stir. Fry over gentle heat until spinach has wilted and mushrooms are soft. Season to taste and add cream, cook for a further 5 minutes. 10. Spoon spinach mixture over the pap squares and sprinkle with fresh micro herbs before serving. Microwave 3

Method: 1. Slice the spring onions thinly. Place in the Microwave Omelette Maker, add the water, cover, and microwave for 6 minutes at 600 watts, stirring halfway through. Allow to stand for 1 minute, then drain. 2. Mix the remaining ingredients in the Quick Shake. Pour onto the spring onions inside the Microwave Omelette Maker. 3. Cover and microwave for 5 minutes at 360 watts. Allow to stand for 2 minutes. 4. Unmold and serve with a salad.

MIELIE BREAD Ingredients 125 g butter, softened 180 ml castor sugar 2 eggs 3 ml salt 375 ml cake flour 250 ml maize meal 5 ml baking powder 125 ml milk 125 ml canned corn kernels, drained 125 ml grated cheddar cheese

Method: 1. Preheat oven to 190°C. Lightly grease a loaf tin. 2. In a That’s a Bowl cream together the butter and sugar, beat in eggs and salt. 3. In a separate bowl sift together cake flour, maize meal and baking powder, add to creamy mixture, add milk and beat until mixture is smooth. 4. Fold in corn kernels and spoon into loaf tin. Sprinkle grated cheese on top. Bake in oven for 20-25 minutes, or until skewer inserted in the centre comes out clean. 5. Serve warm or cold with butter and marmalade. 6. Store in the Bakers Delight to keep fresh for longer.

CRANBERRY, SEED AND OAT CRUNCHIES Makes 32 squares Ingredients 1 cup rolled oats 1 cup desiccated coconut 1 cup nutty wheat or whole wheat flour 1 cup brown sugar 100 g dried cranberries (or other chopped dried fruit of your choice) ½ cup mixed seeds (pumpkin, linseed, sunflower and sesame) 125 g salted butter 1 tbsp honey 1 tsp vanilla essence 1 tsp bicarbonate of soda 2 tbsp boiling water 34 Dry Storage and Home Organisation

Method: 1. Preheat oven to 180°C. 2. Place the oats, coconut, flour, sugar, cranberries and seed in a That’s a Bowl. 3. In a small pot, melt the butter and honey together. Remove from the heat and add vanilla essence, bicarb and hot water. Mix vigorously and pour into the dry ingredients. Mix well until combined. 4. Line a ±25cm baking tray with baking paper. Press the mixture into the lined tray so that it is compact. 5. Bake for 15 minutes then reduce the heat to 160°C, and bake for a further ±15 minutes. 6. With a sharp non-serrated knife, cut into 8 x 4 columns to make 32 squares while still hot. 7. Allow to cool , then break apart and store in a Signature Line Square container.
