CAKIE RECIPE Yellow Cake Recipe (recipe by JD Simon) 1 cup butter, softened 1 ½ cup sugar 8 egg yolks ¾ cup milk 2 tsp vanilla 2 cups White Lily Flour 2 tsp baking powder ½ teaspoon salt Preheat oven to 350⁰. Grease and flour 2 8” round pans. Sift together flour, baking powder, and salt. Put aside. In a large bowl on a mixer, cream together the butter and sugar until light and fluffy. Beat in egg yolks gradually, then add the vanilla. Beat in the flour mixture alternately with the milk, mixing until just incorporated. Pour into the prepared pans. Bake for 25‐30 minutes, or until the tops spring back when lightly touched. Cool for 20 minutes before turning onto cooling racks.
Chocolate Chip Cookie – Use your favorite recipe Take cookie dough and press into a cake pan that is lined with parchment paper. Use enough dough to create a cookie that is a ¼” thick. Bake in a pre‐heated oven at 350⁰ for about 12 minutes. Let cool before removing. Put aside. Cool cookie completely before icing cake.
Icing 1 pound butter, softened 1 pound cream cheese, softened 2 pounds powdered sugar 1 tablespoon vanilla In a mixer, cream the butter for 3 minutes until pale and fluffy. Add cream cheese and beat well for 2‐3 more minutes. Gradually add the powdered sugar and when incorporated, add the vanilla.
Assembly Frost the first cake layer (make sure the cake is completely cooled before icing) and top.
Place the completely cooled cookie on top and ice the top of the cookie.
Next, place the second cake layer on top and frost the rest of the cake.
