Ingredients: ● 12 ounces fresh sweet corn or a 11.8 oz frozen bag ● 1 can (15oz) Black Beans drained,rinsed ● ½ Cup Tomatoes ● 1 Medium Jalapeno, seeded & finely chopped ● 3 Tbsp chopped Cilantro ● 3 Tbsp chopped Red Onion ● ½ tsp Ground Cumin ● ½ tsp Salt ● 2 Tbsp Olive Oil ● 1 Tbsp Lime Juice (half a lime) Instructions: 1. Preheat oven to 500° 2. Shuck corn 3. Rub Olive Oil on corn cobs and Bake on a cookie sheet for 3 ½ minutes, flip cobs over and bake for another 3 ½ minutes. OR Cook as directed on bag of frozen corn. Once cool enough to handle, cut kernels off the cob. 4. In large bowl, mix remaining ingredients. Stir in corn; mix well. Cover; refrigerate 1 hour to blend flavors. 5. Serve with tortilla chips.
