AVIATION 2oz

Passed on throughout the years by a barkeep from the Hotel Wallick in New York City. Aviation gin, Luxardo Maraschino liqueur, lemon, and a spoon of Crème de Violette made this cocktail popular when aviation was about to modernize society. Circa early twentieth century. 12

As Harry Craddock would say, “To be taken before 11 a.m., or whenever steam and energy are needed.” This libation is said to have been around since the late 1800’s. It is a delightful balance of Bombay Sapphire gin, Lillet Blanc, Cointreau and an absinthe spritz. 12

LAST WORD 2oz

This classic cocktail’s origins can be documented to the Detroit Athletic Club during the early twentieth century. Served shaken and straight up; it combines Bombay Sapphire gin, Luxardo Maraschino liqueur, Green Chartreuse, and a dash of fresh lime. 12

VIEUX CARRÉ 2oz

Circa 1930, this libation roots straight from New Orleans in the Hotel Monteleone. It is simple yet complex. It consists of Gibson’s Finest 5yr whiskey, Remy Martin VSOP cognac, sweet vermouth, and healthy dashes of Bénédictine, Peychaud’s bitters and Angostura bitters. 12

Sbagliato, meaning “messed up” or “mistake” in Italian, doesn’t do this refresher justice. The “mistake” of using Veuve Cliquot instead of gin in a Negroni, which also melds sweet vermouth and Campari, turned out to be not so “messed up”. Here’s to delicious mistakes! 18

Asian Wine Sho Chiku Bai Ginjo Sake, JPN, (300 ml) Sho Chiku Bai means "Pine Bamboo Plum". Ginjo is a special reserve connoisseur class of sake. Most sakes are brewed with rice that has been milled 30%. This Ginjo they use rice that is polished over 50%. Additionally, they use a special strain of yeast that allows for fermentation at a cooler temperature. The result of the slower, longer process is a silky-smooth, rich and fruity flavor.

Indigo Wind, Sparkling Sake Junmai, JPN, (200ml) 18 This sparkling saké is rather uncommon. It made in the same fashion as a regular saké except that fermentation is stopped when a certain degree of alcohol is reached, in this case, 6% (rather than the usual 18% to 20%). It then is bottled, but there are still remains of much of the natural sugars in the saké, the second fermentation starts in the bottle, which gives it it's bubbles. This sparkling saké is a refreshing drink that pairs well with dishes with a bit of spice! Nakano, Umé Japanese Plum Wine, JPN, (300ml) Ume fruits come from a Japanese tree closely related to the pear or apricot. When the unripened green fruits are picked and steeped in sugar and shochu, umeshu, or Japanese plum wine is produced. Hailing from Japan’s Wakayama prefecture, this specific plum wine has delicate floral notes with a hint of citrus. It can be served in a chilled glass neat, on the rocks or even as a warm drink on a cold winter night.

Napa Valley Vintners’ Premiere Auction Wines The stories of these wines are as unique as the wines themselves. Since 1997 the Napa Valley Vintners host an invite-only wine futures auction called Premiere Napa Valley. Each wine up for auction must be a one of a kind and crafted in small amounts. Proceeds from the auction go towards the works of the Napa Valley Vintners, a non-profit trade association responsible for promoting and protecting the Napa Valley Appellation as a winegrowing region. Over 300 wineries are members of the association and they support the commitment, preservation and enhancement of the Valley’s land, wine and community for future generations. The Hotel Arts Group is proud to offer you an opportunity to share some of these limited-edition wines that have been featured and purchased from the Premiere auction. In the months to come more selections will be arriving for your pleasure at the Raw Bar, Chef’s Table, and Yellow Door Bistro.

Grgich Hills, Lot 105, Petite Verdot/Cabernet Sauvignon, Napa Valley, 2004 A cool vintage in general, the growing season starting with a wet winter and spring that delayed bud break and led into a slow, even, ripening of the grapes. Then a heat spike in July helped the grapes catch up to a normal physiological ripeness followed by an unusually cool August that allowed the grapes to completely ripen without dehydrating.

Signorello Vineyards, Lot 42, Cabernet Sauvignon, Big Rock Cuvee, 2006 This wine is a deep, dark red color and opens to raspberry, anise, chocolate and vanilla. The lush, full-bodied palette continues with flavor of red berry, cedar, leather and hints of tobacco. Signorello Estate makes limited quantities of premium varietals that blend classic French wine making characteristics with California fruit.

Chimney Rock, Lot 98, Cabernet Sauvignon, Napa Valley, 2006 2006 vintage represents another great vintage in the Stags Leap District. At Chimney Rock this was a particularly luxurious year because they had a tank to dedicate to every vineyard block for the first time since the planting of their last nine holes of the golf course. The 2006 Stags Leap District Cabernet is a great representative of the vintage.

Paradigm Winery, Lot 115, Cabernet Franc/Cabernet Sauvignon, Napa, 2006 This cabernet has a ripe fruit nose of blueberries and black plums. Accent notes are spice, slight vanilla, and cedar. This is a medium bodied wine with fruit flavors matching the aromas – plum and blueberry. Marilyn and Ren Harris not only grow grapes for their own winery but also supply to many of Napa’s finest wineries.

Twomey Cellars, Lot 17, Merlot, Soda Canyon Ranch, 2006 Soda Canyon Ranch is located in southeastern Napa Valley and is the exclusive grape source for Twomey Merlot. This vineyard is planted on deep, well-drained volcanic soils with vine selections from Bordeaux. This wine showcases the intense aromatics, luscious mid-palate, and robustness that characterize this varietal at its best. Aged for 14 months in French oak!

Far Niente, Lot 177, Cabernet Sauvignon, Martin Stelling Vineyard, 2006 Bright with ripe, purple fruits, this wine will impress with complex, layered aromas of black licorice and briar patch. The silky entry progresses along the palate and gives way to dense, velvety chocolate and toast. Full-bodied and concentrated throughout, the wine lingers on with a long, layered finish.

Our award-winning seasonal cocktail selections have been described as some of the best in the country; our selection of wine is thorough and in many cases, exclusive; our above-the-standard spirit pours based on a selection of solid, quality brands is found nowhere else in the city; and, any beer drinker will certainly find something of interest in our selection of ales and lagers. Believing also in protecting that which is sacred, we request that guests dining or drinking at Raw Bar respect that, for us, creating the Raw Bar has been a labour of love, and ask that they follow a small list of expectations. Yelling, shouting, or loud behaviour is discouraged. Instead chill, sip, relax; repeat. You deserve to take it easy. Each guest of the Raw Bar ultimately has a responsibility in the conduct of their party members. Please bring those that you would feel comfortable entertaining in your own home. Our smoking patrons will find pleasant company at the entrance to Hotel Arts. Please use this space as opposed to our pool deck. For those guests who have dabbled in our serene pool, please feel free to freshen up in your room, while we await your arrival in Raw Bar. Dancing in the aisles? Well then you’ve likely consumed enough as clearly there is no dance floor. Please settle your bill; our staff will graciously direct you to a taxi for a safe ride home or your next adventure.
