GLOSSARY COUER A LA CRÈME ‘A heart shape of cream’ – ours made by hanging cream, yoghurt, mascarpone and vanilla. FREEKEH Comes from the Arabic word farik and is a cereal food. The wheat is harvested while the grains are still green and moist then piled up and set alight to burn off the straw and chaff. The now roasted wheat undergoes further threshing and sun-drying to make the flavour, texture and colour uniform. This threshing or rubbing process of the grains gives this food its name, farik or “rubbed”. GREMOLATA An Italian condiment made with parsley, lemon zest and garlic. PIMIENTOS DE PADRON A variety of green peppers from North Western Spain. They are small peppers about 5cm long but their peculiarity lies on the fact that, while their taste is usually mild, a minority are particularly hot. NAM JIM A Thai sauce made with palm sugar, chilli, garlic, lime, coriander and fish sauce. ROMESCO A nut and red pepper based sauce which originated from North East Spain and is typically made with roasted almonds, fire roasted red peppers, garlic, vinegar and oil. SARLADAISE These potatoes from the South West of France are named after the city of Sarlat in the Périgord. The preparation only requires three ingredients potatoes, duck fat and garlic.
