IGNITION OF A WOOD-BURNING OVEN
IGNITION OF A GAS OVEN
Put the wood rack in the middle of cooking floor. The wood rack allows a correct oxigenation of the flame. To light up easely we recommend using straw and wood stick. BE CAREFUL making sure a correct air flow between the woods.
Push and turn the control to star position, and push the red button to switch on the pilot light.
Light a fire with fire starter straws; use the wood holder to simplify the management of the flame. Place some medium-sized split logs without smothering the fire.
Turn right the control to light up the whole burner block. Regulate the flame according to your needs.
The first time you use the oven, we suggest to keep the device on for a couple of hours to eliminate the humidity of the cooking floor.
Use the door to reach the temperature you prefer.

CLEANING
REMOVAL AND CLEANING OF THE BURNER

Make sure the oven is cold and off, collect the cooking ash with a wire brush and an ash pan. Clean the cold oven floor with a brush and gently wipe it with a damp cloth. To clean the steel exterior of the oven, use a cloth soaked in water. Spread a thin protective layer of Vaseline oil to make your oven shine. Remove and clean the chimney flue at least once in a year to prevent blockages and facilitate the smooth passage of fumes. Burnt-on food in the oven? No problem! The self-cleaning oven uses high temperatures to burn off leftovers by virtue of pyrolysis. Any rust spots in your oven? Apply a coat of polish with a brush and cover it with a light layer of Vaseline. To sanitize, clean and heat the oven floor before cooking, spread some red hot coals evenly on the floor and leave for a few minutes. Do not use chemicals to clean the oven. Do not clean the oven when it is in operation. If you install the oven in a seaside location, in order to avoid scaling and corrosion, it is recommended to often clean the oven with fresh water.
The gas burner must be cleaned periodically by accurately aspirating food residue. Be careful not to damage the burner while cleaning. Before cleaning, remove the burner from the gas-burning oven through the following steps: Remove the front knob (a). Unscrew the fixing screw (b). Remove the protective panel by unscrewing two screws (c). Remove the gas cover (d) until you find the piezo ignitor connection cables (e). Disconnect the two piezo ignitor connection cables. If necessary, remove the protective cover by unscrewing the screw and pull out the burner (f). 9. To reinstall the burner, follow the operations in reverse order.

MAINTENANCE 1.
For a proper oven maintenance, before switching it on make sure that the chimney flue is unobstructed and in good condition and that the ashes of previous cooking have been removed. 2. Remove the ashes when the coals are fully extinguished. 3. The oven can be used all year round; in the winter months switch it on to medium heat to avoid thermal shock due to humidity. 4. We recommend that you take out a maintenance agreement with a qualified tradesman.

Always preheat the oven before cooking; then heat for 40 minutes or until temperature reaches 350°-400° C. Wait few minutes until temperature has stabilized to allow the oven floor to evenly heat up.

TIPS FOR COOKING PIZZA • • • • •
Air temperature inside the chamber 400°C. Refractory oven floor temperature 350°C. Once the optimum temperature is reached, add some small-sized split logs to keep the flame alive. put pizzas inside the oven starting from the farthest point from the burner. bake for 50-60 seconds and start turning pizzas for the farthest one from flame. complete cooking and take out pizzas from the oven.
IGNITION: In few minutes a medium size oven, reaches the optimal temperature for cooking.
STABILIZATION: The oven has reached the desired temperature for the pizza but the flame is still too high. It has to stabilize. Need to supervise the cooking.
REGIME: The oven temperature is stabilized. Now you can enjoy the maximum efficiency of the product.
