These are a great way to get in some extra protein and veggies with little calories and all complex carbs. A perfect snack– can be eaten warmed up or cold on-the-go, or eat a few of them with your meal. They’re delicious any time of day! Switch up their flavor each time you make them by using different vegetables, and feel free to get creative and add seasonings, too! Easy Egg Muffins 1. Spray down a large muffin tin with cooking spray. 2. Fill each tin about ½ way full with chopped veggies. (Remember, more color = more nutrition!) 3. Season your egg, egg white, or combo of both with a little salt, pepper, or other seasoning for flavor. Pour the mixture over your chopped veggies in the tins until it covers the veggies completely, about ¾ of the way full. 4. Bake in an oven preheated to 375°F for about 15 minutes Remove and allow to cool slightly before removing and enjoying!
