Everybody loves a good burger That’s why Two Zesty Bananas has trekked deep into the heart of the burger jungle to bring you what is the ultimate gluten-free, soy-free, and stress-free burger patty. These burgers are filling, flavourful, and firm so they won’t fall apart when you slap them between a sesame seed bun and cram all of your favourite toppings in.

We like to bake these at home but double-up the recipe for your next barbecue and blow your friends and families’ minds when they sink their teeth into these tasty grilled bad boys. Brace yourself for burger nirvana.

1/2 cup of uncooked brown rice

(OR SOMEONE YOU CAN BOSS AROUND)

400g/14oz button mushrooms (approximately 16 medium mushrooms) 3 bay leaves 1/4 cup tomato paste 1 regular can of brown lentils, drained (approximately 425g/15oz)

SMALL SAUCEPAN OR RICE COOKER

TWO STOVE ELEMENTS

A DECENT SHARP KNIFE

1 tablespoon onion flakes 1 teaspoon garlic flakes 1/4 cup regular rolled oats (‘wholegrain oats’ in NZ) 2 tablespoons tapioca flour or corn starch (‘cornflour’ in NZ) 2 tablespoons nutritional yeast (Bob’s Red Mill, Braggs and Lotus are our favourites) 1 teaspoon ground coriander

(OR NON-STICK COOKING UTENSIL)

LARGE MIXING BOWL

BAKING TRAY

HAND-HELD MIXER, FOOD PROCESSOR

(OR A DECENT MASHING UTENSIL)

BAKING PAPER OR SILICONE MAT

1 teaspoon paprika 1/2 teaspoon salt 1 teaspoon cracked or freshly ground pepper

Add the 3/4 cup of water to the sauce pan (or use a rice cooker)

Add the rice to the sauce pan

You will know your mushrooms are cooked when they are practically dry, and there is no moisture left, they will also be a very deep golden brown.

Chuck the onion, garlic, oats, starch, nutritional yeast, coriander, paprika, salt and pepper into the mixing bowl...

As soon as your water and rice come to a boil, turn the heat down to very low, cover your sauce pan and let your your rice cook for 25 minutes.

Preheat your oven to 200 celsius/ 400 fahrenheit, or /180 celsius 350 fahrenheit fan-baked

Grab your baking tray and put your baking paper or silicone mat on it.
