1 28-ounce can, crushed plum tomatoes

4 cups chicken broth 3 tbsp olive oil
Easy & Delicious Fall Entertaining
1 tbsp dried oregano 6-8 basil leaves (keep some for garnish) salt & pepper to taste
1 Set oven to broil. 2 Mix tomatoes, onions, garlic, oregano and olive oil in bowl with salt & pepper. 3 Place on baking sheet. Broil for 10 minutes. Rotate tray to char mixture. GREAT TIP: Fire roasting tomatoes adds smoky flavour to soup. If you do not have a grill, place tomatoes under oven broiler. 4 Lower oven to 350˚F. Roast mixture for about 30 minutes. 5 Add canned tomatoes, broth and basil to pot. Bring to boil and simmer. Add oven roasted tomatoes and simmer for about 15 minutes. 6 Roughly puree soup. Let cool slightly, then fully puree. 7 Roughly chop basil for garnish. Drizzle with olive oil. Serves 12

Thick-Cut Orange Marmalade Preparation: 40 minutes plus soaking Cooking: 2 1/2 hours 2 lb oranges (Seville if in season) 1 lemon
1 Wash and dry fruit. Cut in quarters. 2 Set strainer over bowl lined with double layer of cheesecloth. 3 Juice fruit over strainer; scour shells as you go. Drop seeds, squeezed flesh and membranes into cloth. Set aside juice. 4 Tie residue into bag and put in preserving pan with water. 5 Shred skins finely and add to pan. Let soak for several hours or overnight. 6 Bring to boil, reduce heat, and simmer uncovered until peel is tender and liquid reduces by half (at least 2 hours). Cover pan if too much water evaporates before peel is tender. 7 Remove bag and squeeze liquid into pan. Discard contents of bag. Add sugar and juices to pan.

8 Bring slowly to boil, stirring until sugar dissolves. Raise heat to boil until setting point for about 10 minutes. Let cool and thicken, then stir to redistribute peel. Add whiskey and stir before canning.
