Easy Dinner Recipes!

These easy dinner meals are all made to FREEZE so you can make them at your convenience and then freeze them for later. Thaw them out in the refrigerator the night before you want to cook them and they'll be ready to go! The slow cooker meals will last 3 months in the freezer, and the meatloaf will last 6 months.

SWEET POTATO COCONUT CURRY 1 onion 2 cups lentils, uncooked 2 cups sweet potato cubes 2 sliced carrots 1 can coconut milk (light is fine) 1 15 oz can diced tomatoes 1 Tbsp curry powder 1 t salt



Combine all ingredients except for coconut milk in a freezer bag. • Freeze until ready to use. Refrigerate one night before cooking to thaw. • Add 2 cups water and 1 can coconut milk before cooking. Cook 6-8 hours on low. • Serve on hot cooked rice.

SLOW COOKER CHILI

20 oz extra lean ground turkey breast 1 Tbsp worcestershire sauce 1/4 tsp sage 1 tsp salt 1/2 tsp each of ground mustard, pepper, & lemon pepper 2 garlic cloves 1 egg 1/2 cup quick oats 1/4 cup red sauce 1/2 cup bell pepper 1 onion, small, chopped 1/2 cup green onion Glaze: 1/4 cup ketchup + 1 T worcestershire + 1 T honey

20 oz extra lean ground turkey breast 1/2 cup onion 1 bell pepper 1 can white beans 1 can black beans 1-2 stalks celery 1 1/2 cups tomato sauce 3/4 cup broth 1 15 oz can tomatoes 1 Tbsp garlic 2 T chili powder 2 t cocoa powder 1 tsp each of cumin, garlic powder, salt, paprika, & cinnamon 1/8 tsp cayenne





Combine all ingredients. Place in an ungreased 9×5 inch loaf pan lined with foil and freeze. Thaw overnight before using.. • To cook, preheat oven to 350°F. Add glaze. Bake uncovered at 350º for about an hour. Let cool to room temperature and serve.
