MOLECULAR GASTRONOMY City of Glasgow College is the only college in Scotland offering this speciality course in all aspects of molecular gastronomy. This one day course takes place in one of our professional kitchens and provides an opportunity to prepare, cook and present a wide range of dishes using modern cookery techniques. Each candidate will prepare an array of dishes using the techniques listed and will receive a gastronomy kit to take away to practice in their own workplace.

COURSE CONTENT • Sous Vide Cookery Unlock the secrets of sous vide cookery. • Spherification Direct and reverse spherification. • Foams and cream siphon Hot and cold foams and how to get the best out of an ‘espuma siphon’. • Clarification Using getatin filtration, clarify any fruit or vegetable juice. • Using protein glue (transglutinimate) Make a permanant seal on meats, terrines and fish or create noodles entirely from prawns.
