GFP Sugar Cookies

Ingredients • 1 C white sugar • 1 C unsalted butter (softened) • 2 egg yolks • 2 tsp vanilla • 2 ¼ C Gluten-Free flour blend (see below) • ¼ tsp salt Flour Blend (save the left over blend for another batch!)  1 C Gluten-Free Prairie Toasted Oat Flour  1 C rice flour  2/3 C potato starch  1/3 C tapioca starch  1 tsp xanthan gum

Directions 1. Combine sugar and butter in a stand mixer until creamy. Scraping down the sides as needed to fully incorporate. 2. Add egg yolks and vanilla. Continue to mix until fully combined, scraping down the bowl as needed. 3. Add the GF flour blend ½ C at a time on slow speed until fully combined. The dough will be slightly stiff. 4. Place dough on a sheet of parchment paper. Roll the parchment over the dough and form a tube of dough. Twist the ends of the parchment to help form the dough into a nice tight tube. 5. Tightly wrap the tube in a sheet of plastic wrap and refrigerate for at least 2 hours or until firm. 6. Heat oven to 350º F 7. Remove plastic from dough and cut into ¼” rounds and place on a cookie sheet lined with parchment paper. Place cookie rounds about 2” apart on the sheet. 8. Bake for 13 minutes in a convection oven or for 15 minutes in a standard oven. Watch the end of the cooking time carefully as to not burn the cookies! The edges should lightly browned and the center should be light yellow. 9. Let stand on cookie sheet for a couple minutes, then allow them to fully cool on a cooling rack. 10.
