RP’s Pasta founder and owner Peter Robertson, while selling his authentic Italian fresh pasta at the Dane County Farmers Market in Madison WI, was approached by a long time customer and friend. She was upset and emotional. She had to stop eating wheat. Peter set to work to develop a recipe to equal or even surpass the quality of RP’s great fresh pasta. EUREKA!! In 2008, RP’s started making fresh gluten free/wheat free pasta that rivaled the quality of traditional semolina pasta.
