This cheese is wrapped in muslin cloth and is matured for around 10 months in a cave in the chalky North Downs which gives this cheese a slight earthy taste to it. Sussex Blue This is made in Mayfield, East Sussex and is a hand made cheese. It has a smooth and creamy texture with small blue veins giving a mild creamy blue flavour. The cheese is matured for around 8 weeks and makes a nice change from Stilton.
