Pesto is delicious but it’s traditionally made with a LOT of oil and pine nuts and parmesan cheese so it can be very high in fat. This recipe is revamped– low fat and vegan!

INGREDIENTS 1 15 oz can white beans 1 cup basil 1 cup spinach 1 Tbsp water (or more for a thinner sauce) 2 garlic cloves ½ lemon juiced ½ tsp salt 2 Tbsp nutritional yeast 1-2 Tbsp pine nuts/walnuts olive oil to taste

PROCEDURE • Add all ingredients to a food processor and blend it up! • Adjust nutritional yeast, pine nuts and olive oil to taste. • Adjust water based on how thin/thick you want the sauce or paste.

NUTRITION per 1 Tbsp (yields about 2 cups): 13 calories | 2g carbs |
