KITE FESTIVAL

DEAN/CAMPUS DIRECTOR'S MESSAGE Dear reader,

On Saturday, a group of 21 students and LRJJ staff went to the 16th Shanghai Tourism Kite Festival. Despite the heavy rain we all dressed up in our red ponchos and lined up behind our countries for the official ceremony, then ventured onto an open field to fly our kites really high in the sky. After having a lot of fun, we all went to dry off at the Howard Johnson to enjoy a lunch buffet. Rain or shine our LRJJ students certainly know how to keep a positive energy and share their great spirit with the Chinese culture! Here’s some students sharing their experience of this fun and memorable day!

Welcome to our first edition of our Campus Life Magazine for Autumn 2013. This edition has the title “New Beginnings”. We decided on this topic since new beginnings are part of everybody’s life. There are big new beginnings such as starting a new job or getting a job in a new country, or there are small new beginnings which occur every day. This is what we are focusing on in this issue. New beginnings may seem a little threatening to people but they often can transform and improve them, as you can find out here. Let’s look at what you will find in this magazine in regards to our new beginning: We have a NEW Dance Studio which opened at the beginning of the quarter. The studio is giving our students the opportunity to do more exercises together indoors. We also had a faculty development week change of environment moving from our campus to the famous Fairmont Hotel at Yangcheng Lake. It was a great opportunity for our Academic Team to create a close connection with the hotel industry and to gain some insight about the property, while enjoying the wonderful facility. During the development week for teachers and faculty we also had the privilege to undertake a new kind of tasting to increase our product knowledge. We were privileged to receive a tasting of TEA from one of the top brands in the world, 'Twinings of London'. Tea has been very popular in China for centuries and its popularity is spreading around the world, leading to a healthy new beginning in people’s lifestyle. We also reinvented the yearly structure of our quarterly main student events by adding in the 'LRJJ’s Got Talent' Show. Now we will have one special event for each quarter which consists of our 'Charity Run' in Spring, Quarter 1; the 'Oh My Olympics' event in Spring, Quarter 2; the 'LRJJ's Got Talent' show in Autumn, Quarter 2; and the 'Culture Day' in Autumn, Quarter 2. I’m sure with this change we will create more excitement in the lives of our students. We also gave our curriculum a new makeover by cooperating with the HYATT Group by starting a monthly educational session project for our students. You can find out more about this here as well. Finally, we’ve had several new beginnings at out college recently as some new people have joined our community. We were able to welcome many great new people and colleagues in our college. They will be introduced in this magazine. Other articles include:

Maria: "We had a great time flying kites, making incredible photos and having fun with students from LRJJ, even though it was raining it wasn't a big obstacle we found a way how to deal with it and enjoyed our time!! Thanks a lot to the organizers!" Akjamal: "It was the first time I came to the Kite Festival in Fengxian with my LRJJ friends. I enjoyed the time in the nice open and free environment where in the sky, you could see many types of kites from small butterflies to a giant Chinese dragon. And even though it was raining, it did not stop us from having a fun." Zhaina: "It was one of the most colorful and vibrant festivals which I have had the opportunity to enjoy in my life. I had an unforgettable impression of celebrating this festival with so many different nationalities which made feel us like one and undivided." Tin: "It was my pleasure to be a part of LRJJ team participating in Kite Festival. Coming to this amazing festival, I had a chance to meet different people with different cultures, languages and backgrounds. It was a very good occasion that everyone all over the world was able to be together and experience the very traditional Chinese art of kite flying."

‘Our teachers can use a little bit of team building’ is what the management of the school must have thought when they invited us to the Fairmont Yangcheng Lake Resort in Kunshan.

Starting next quarter, you have a chance to upgrade your lifestyle and enjoy a new Shanghai experience. Just look at these pictures and you will see what’s available to you. More information will be available upon request and interested students will be given a tour of the facility to see for themselves.

The resort is a beautiful property with a wonderful view of the lake. The hotel is very nice and so is the staff. We were shown around the entire hotel, the GM even took the time to show us the backrooms: the kitchens, the generator room, the security system. There was some time for serious stuff too, like the best teacher practices of Miss Danilova and Miss Wang because even teachers can still learn a lot and especially from each other! But there was mainly time for fun: tandem bike rides around the property, games, treasure hunts, hairy crabs, good food. It was a great opportunity to get to know each other better and to spend some time together. I think I speak for everyone when I say we all thoroughly enjoyed it!

NEW IMPROVED FITNESS CLUB DANCE STUDIO

FIRE DRILL

We are happy to have a lot of our students using our NEW Dance Studio for Yoga, Insanity Workout, Hip Hop Dance, etc!!! See the pictures below of students having lots of FUN!!!

On October 22, 2013, a fire drill was conducted in one of LRJJ’s student dormitories. This practice was held with a purpose to raise students’ awareness on fire evacuation procedures and the location of the emergency exits of the dormitory. The alarm was set to be off at 16:25. As soon as it rang, the students with the guidance of their respective floor supervisors directly marched towards their designated emergency exits. The drill was completed successfully thanks to each student's understanding and participation.

1St Jessica (PGC) - Dance

By Mrs. Yvonne Yang The Fifth Chinese Talent Show has started recruiting recently all over china, and the First LRJJ Got Talent ended with cheers and applause. I have to say that we really have got talented students at LRJJ. WOW!!! As one of the judges, I could not move my eyes from the performers and it was so difficult for me to make my final decision about which was best since all of them were well prepared, not only with the quality of their performance, but also with their costumes and props. I was surprised to know that even if they had a very short time to prepare, it was amazing! Congratulations again to all the performers and teachers who were there to support them! Faculty, shall we prepare ourselves for next time to compete with our students, it will be very interesting, what do you think? I am definitely looking forward to the next one.

LES ROCHES JIN JIANG SHOWCASED ITS COLLECTION OF STUDENT AND FACULTY PERFORMERS!

LRJJ GO GREEN BEFORE th THE TALENT SHOW ON 16 , OCT 2013

As part of an assignment with the Marketing class the HA III students have prepared a press release for the LRJJ Got Talent event. Here is an exemplary press release done by Brenda! Well done! Students and teachers alike enjoyed a special day filled with unique performances by many talented individuals at Les Roches Jin Jiang. FENGXIAN, SH – On Wednesday, October 16, 2013, Les Roches Jin Jiang (LRJJ) held a one-of-a-kind event at their school called LRJJ Got Talent. There were many "oohs" and "aahs" as each performer left the audience in awe of their set of talents. The many types of performances from all different parts of the world just proves that LRJJ is a melting pot of cultures, where students from different backgrounds study hand in hand, a special skill set needed in the world of hospitality. Days prior to the event, tickets were selling out fast for 25 RMB per person. The money collected would be donated to Roots and Shoots to help them with their tree planting project in Inner Mongolia. To celebrate the special day, a delicious BBQ buffet lunch was provided for those who attended the event. Every student came to school dressed in their casual clothes, revealing their different types of personalities. At 1pm, the auditorium was fully packed and the show was ready to start. The first performance was from Yana, a Russian student from the TS class with her Russian belly dance. It turns out that there is more than one type of belly dancing, as Gloria Gao, another TS student from China, dressed in traditional Chinese costume made up her own belly dance incorporating lots of Chinese influence. A while later, the French and Mandarin class sang songs in their respective languages. Students of many nationalities sang to the legendary “Yue Liang Dai Biao Wo De Xin” made famous by Teresa Teng. Other unique performances include Vlad, a Hospitality Administration I (HA I) student who solved the Rubik’s cube in less than 30 seconds. Ending on a sweet note, Mr. Lee and Ms. Levesque did a breathtaking 'magical' mind reading show. The tense moment to announce the winners finally arrived. Although it was a very difficult decision, the first prize went to Jessica who did a traditional Chinese belly dance. Second prize went to Slava and Artem who did a breakdance duet. And last but not least, the singing club scored the third prize with their rendition of Mercy by Duffy. In everyday life, each student may seem professionally identical in his or her black and white suit uniform. However, when the uniform is taken away, we see the true colors of each student and their creative character. Many students enjoyed the show and hope to join next year’s LRJJ Got Talent. Brenda Kristie is currently pursuing a Post Graduate Diploma (PGD) at Les Roches Jin Jiang. In addition, she also holds an Economics bachelor degree from the University of California, Los Angeles. Les Roches Jin Jiang is an international hospitality college located in Feng Xian, Shanghai. Its flagship campus is located in Bluche, Switzerland. Fabio Carriço de Souza Food & Beverage Lecturer

Professional Biography: Mr. Carriço de Souza is a leader in the beverage services industry and has a vast knowledge in wine and spirits, as he has achieved some of the important international wine designations, including the Certified Sommelier designation from the Court of Master Sommeliers. In addition, his background includes training, marketing, education, and restaurants. He joins us from the prestigious House of Roosevelt Shanghai on The Bund. Mr. Carriço de Souza holds a bachelor degree in Visual Communication and an MBA in Marketing.

Ajaya Man Shakya Culinary Arts Instructor

Professional Biography: Mr. Shakya has more than 10 years of Food & Beverage working experience from London Hilton Heathrow, Hilton Birmingham Metropole Hotel, The International Convention Centre (ICC) Birmingham, Crowne Plaza Kathmandu-Soaltee, Holiday Inn Pune Hinjewadi, and Dwarika’s Group of Hotels and Resorts Nepal. He is now part of the Food & Beverage Academic department at LRJJ.

Sidney Shao Culinary Arts Instructor

Professional Biography: Sidney Shao has been engaged in a western kitchen for many years, working in a 5-star hotel. In these years, working methods in western food cooking have developed and have begun to utilize higher cooking technology and in-depth research within Europe, America, and other parts of the country. Use of cooking technology requires a certain level of understanding and mastery. Mr. Shao is accomplished in making Italian food and French food: western-style steak entrées, traditional pasta dishes, western-style soups, appetizers, cold salads, Mediterranean food, Italian pizza, sandwiches and other western-style dishes. He can provide for buffets and business packages, design self-service menus, and conduct classes. He has rich experience in operations, and is skilled at large banquet food research and chemical molecular cuisine.

Tony Wang

Culinary Pathway Leader Professional Biography: Chef Tony worked and studied in Ireland for several years before launching his career in Shanghai. He worked in a variety of restaurants and hotels such as Courtyard by Marriott (as Chef de Partie of a Western kitchen); O’Malley’s Irish Pub (as Kitchen Manager); Wagas (as Area Chef Manager); Millennium and L’escalier on the Bund (as Executive Sous Chef); and Sofitel Nanjing Hotel (as Executive Chef). He joins LRJJ from the Crowne Plaza Hotel where he was the Executive Chef in charge of 5 kitchen operations. Chef Tony is also well known through his famous program on The International Channel Shanghai (ICS) ‘You are the Chef’; as for several times he prepared the dishes for the host on camera.

My colleagues and I joined an activity as a volunteer of Grand Hyatt on October 23. I very much appreciate that Hyatt could give us the special chance to challenge ourselves, especially Mr.Charles, he helped us as much as he can. Absolutely, it was an amazing experience for everyone. But to be honest,it was the hardest day in our life up to now. There were lots of challenges the whole day. You have no idea what exactly we have been though and how exhausted we were.Despite this, we still did well and enjoyed it. I’m so proud of all my colleagues and myself. This is the real hospitality, we learned the knowledge that books will never give us. Through this activity, I gained a deeper hotel management understanding, and in the hospitality industry have my own thoughts and understanding. Throughout the event I am more familiar with the hotel's operational procedures, in the attitude with people there has been a greater increase. For hotels and other service industries, in terms of quality, service is undoubtedly a core competency for enterprises, it is the lifeblood. High quality of service not only gives a deep impression to customers and lays the foundation for their next visit, but also enables customers to feel more honor for the hotel, and build a good brand and image. Meanwhile, I will improve my service awareness, develop a good habit of smiling to guests at all times, learn how to use the standard courtesy etiquette, and learn foreign language which is very important. Hotel Culture is the soul of the hotel business. Hotel service culture is omnipresent: etiquette culture, regional culture, food culture, predicament culture, etc. All the hotel staff are masters of all the guests when they arrive at the hotel and will produce more or less dependent on the hospitality staff and hotel, in addition to receiving the service received during cultural or knowledge, they also encounter difficulties to seek help from the hotel. Therefore, we can say that the hotel is awash culture and knowledge of the place. Thus, the people who work here have more knowledge, culture and the arts. Guests enjoy a dish, and the ear is the waitress with a sweet voice introducing the cuisine of knowledge, including the November 2013

origin, spread, characteristics, ideas, etc., which not only adds to the pleasure of food products, but also allows guests to receive some new knowledge and information, to bring them from another level to feel worthwhile. Anywhere in the hotel are courteous staffs, standardized operations, professional smiles, courteous demeanors, allowing guests all the time without the influence of cultural etiquette . Individuals in society are always suffering from the impact of the surrounding people, the so-called people in groups, cultural etiquette not only improves the quality of the hotel in person, but also has a beneficial impact on the guests, to enhance the quality of the whole society and the arts. Another called "predicament culture", that is the knowledge to help customers have the ability to solve problems, a satisfactory and pleasant surprise to complete an impossible job.

As a five star hotel manager, you must grasp the consumer psychology of guests, and use marketing skills to improve the hotel occupancy rate in the hospitality industry. Due to hotel guests and that the need of guests are varied, the central reservation always deal with all kinds of problems in the process of customer service, which requires the manager should have strong strain capacity. And you must, with the guests, your staffs and superior departments, coordination to achieve mutual understanding and cooperation. Also have a strong sense of professionalism and responsibility, have a seriously positive work attitude, carry out tasks with drive, and work style is also ver important. If you want to be a manager, you have to make more effort than the others and persevere, no matter how difficult it is to do it. Then you can realize your hospitality dream.

CLUB LEADERS Dance Club My name is Sasima Thongthip. I am the leader of the Dance Club. I have enjoyed working with my other classmates in the school. I also enjoyed showing and giving them my knowledge, and also learning many dances from them all. This also improved my team work ability and teaching skills.

CDIP ALUMNI VISIT Our Career Development and Industry Placement officers (Julia and Glen) were happy to welcome a successful alumni of LRJJ. Here is what they found out: Christine Moreno is an LRJJ alumna who graduated in June 2011. Now she has been promoted to Restaurant Manager at Hotel Indigo, a boutique hotel brand under InterContinental Hotels Group. Christine has been living in Shanghai for 3 years, and joined the hotel 2 years ago as a Management Trainee. She is an outstanding role model for her transformation from a student to a young professional.

Q&A 1.How long have you been working at Hotel Indigo Shanghai on the Bund, China? I have been working for two years at Hotel Indigo Shanghai on the Bund. 2.What was your first position held in this hotel? Has your career progressed within this hotel since then? My first position was a 6-month Management Trainee position in the Food & Beverage department, and then I was promoted to Assistant Restaurant Manager. After that I was promoted again as Quay Restaurant Manager, my current position. 3.Where did you have your very first internship? My first internship was also in this Hotel Indigo. 4.What do you think has made you successful in your career so far? Are there any challenges that you have to overcome in your work on a daily basis? Working hard and being patient is very important. Cultural awareness is a challenge to me. I need to deal with different customers from different cultural backgrounds. I learn and try to overcome this each day. 5.Outside of work hours, what do you do? I hang out with friends in my spare time. 6.What do you think is the most memorable moment during your life in LRJJ? Student activities impressed me the most, and all the happy hours I spent with my friends. 7.Could you give any job-hunting tips to our current students? Being patient is important, and not rushing. Develop the career step by step. Find the position suitable to you (and your characteristics). 8.What’s your next step? The next step is to become the Food & Beverage Director. I also want to try to find opportunities outside of China and experience different cultures.
