Learning how to store prepped food is just as important as learning how to prep the food itself! The first thing to consider is how many days worth of food you have to store. I have a whole chart in my Meal Prep: A Beginner’s Guide eBook that breaks it down, but I usually much prep for 4-5 days at a time. If I have more food than I can eat in that time, I’ll freeze the rest.

FRUITS & VEGGIES If they dry out more quickly, I store them in an unsealed bag and add a splash of water to keep it moist. It’s also a good idea to store cut fruits and veggies in glass containers lined with paper towels which can help keep the moisture out. GREENS Greens are stored best in bags that are sealed with a little bit of air. COOKED MEALS/PROTEIN I store them in the fridge within 2 hours of cooking. You don’t really need to wait for them to cool completely to store them, but you can if you prefer. WHERE TO PUT THE FOOD IN THE FRIDGE The top shelf of your fridge is the warmest, so yogurt and cheese and other preprepared items should go up there, as well as your cooked meat. This is why crisper drawers for produce are usually at the bottom. Door racks are best for eggs and condiments and juices because the temperature fluctuates when the door is opened and closed, and these items won’t be as affected by that change. Try not to stuff the fridge TOO full so the air can circulate and keep the food at a safe temperature.

Does food lose nutritional quality when it’s cut? Maybe. But studies show that if nutritional quality is lost, it’s very little. I know for me personally, if I don’t cut it in advance, I won’t do it at all. For me, it’s worth it to eat the veggies with SLIGHTLY less nutritional quality than not eating them at all. The choice is yours!
