2. Spray bread on both sides with oil then rub with garlic.

2 garlic cloves, halved lengthways

3. Grill bread for a few minutes on each side until toasted.

8 thick slices sourdough bread

1 quantity (2 ½ cups) Mexican Tomato Salsa

1. Preheat grill to medium-high.

4. Top each slice with salsa and a dollop of sour cream. 5. Season, scatter with coriander and serve.
