The Carte d’Or Cuvée is every expression of the Drappier with its very high proportion of Pinot Noir, one is almost tasting a Blanc de Noirs. A Champagne with a fine aromatic richness, it opens with aromas of stoned fruits such as white vineyard peach.

The nose brings to mind white peach & pear but also more floral notes such as peony. On the palate a mineral Champagne lightly biscuit. Creamy, supple, seductive. Made exclusively from white grapes, as the name may suggest.

Very well structured, with exemplary purity of red fruits. A striking Champagne on the nose offering similar sensations on the palate. Warm & satiny, lightly spiced with balanced hints of stone fruits, leading to a lovely freshness on the finish.

Drappier is considered one of the finest boutique Champagne producers in the world; this is because their wine cellars are among the oldest and most extensive in Europe. Interestingly they were the only cellars that weren’t damaged during both world wars or the fires that raced through the area in the 1950’s. Magnum

Very fresh notes evoking pear, lemon & hazlenuts. On the palate a very dry & mineral Champagne but bursting with life. It will delight enthusiasts & purists on the lookout for new taste bud sensations. Reccommended for those allergic to sulphur.

A very complex, rich nose comprising hints of citrus fruits, bread hazlenuts & almond. A touch of vanilla testifies to the high proportion of Chardonnay while the depth of the Pinot Noir is expressed in the form of red fruits & violets.

Golden in colour with amber nuances. The Grande Sendrée reveals subtle aromas of dried fruits & some touches of toast. The whole unfolding into notes of citrus fruits, fruits with white flesh & stoned fruits. The palate accentuates the vinosity, the depth & the structure.

~ Chenin Blanc ~ A classic grape variety from the Loire where it exhibits floral & honeyed aromas, apple and quince flavours & zippy acidity. Think Vouvray. From the New World it can be quite ‘pear droppy’, becoming more peachy in some of the fuller wines, sometimes a hint of fruit salad. It’s the most widely planted South African white varietal, they call it ‘Steen’.

Sauvignon Blanc’s greatest attributes is its fabulous array of aromatic qualities, which vary according to growing location and its treatment in the cellar. From the Loire Valley the style is reminiscent of cut-grass, gooseberry, flint & nettles. In the New world, particularly New Zealand it produces a stunning array of pungently assertive characters, from the green grass, green bean, tinned pea & asparagus flavours to the more tropical, ripe spectrum of grapefruit, guava, passion fruit & mango.

Rumi - circa 1200’s

~ Merlot ~ For long considered the junior partner in the great Bordeaux duo of grape varieties, it has more recently almost achieved ‘cult status’ thanks to certain Merlot based Pomerols & Saint Emilions in Bordeaux, as well as its lusciously plummy styles from California & Chile. It’s soft textured producing plummy fruit & almost fruit cake flavours & mellow tannins. From the cooler climates you might get a little grass & bell pepper as it develops blackcurrant, blackberry, blueberry chocolate & spice characteristics when fully ripe.

~ Malbec ~ Responsible for the so-called ‘black wine of Cahors’ in South-west France, Malbec is also a minor partner among the five main red varieties that make up the Bordeaux blend. In France it can be harsh & rustically tannic. However it is the red grape par excellence in Argentina, where it makes a softer, juicier style of red, with raspberry, mulberry blackberry allied to tar & game-like undertones. We are also seeing Malbec in Chile, Australia & California.

~ Viognier ~ The hottest of the Rhône Valley trio, which includes Marsanne & Roussanne. From the small appellation of Condrieu, considered to produce some of the greatest whites, it is aromatic, powerful, with its hallmark blossom scents & apricot & peach-like flavours. In the new world you get apricot & peach & can become exotic & spicy with plenty of body. It is planted throughout the New World, in particular Argentina.

I can certainly see that you know your wine. Most of the guests who stay here wouldn’t know the difference between Bordeaux and Claret.

Basil Fawlty - Fawlty Towers.

Pinot Noir grapes are grown around the world, mostly in the cooler climates, but the grape is chiefly associated with the Burgundy region of France. Pinot Noir is also used in some Italian wines. Other regions that have gained a reputation for Pinot Noir include California, South Africa and New Zealand. Pinot Noir is the primary varietal used in sparkling wine production in Champagne and other wine regions.

~ Shiraz/Syrah ~ The name Shiraz, from Shiraz in Iran, historically was applied to a wine very different from today’s Shiraz wines, and was made from a grape or grapes entirely different from the Syrah that has been proved to originate in south eastern France. Smaller amounts of Syrah are also used in the production of other wine styles, such as rosé, fortified wine in Port wine style, and sparkling red wine. Due to their concentrated flavours and high tannin content, many premium shiraz/Syrah wines are at their best after some considerable bottle aging. In exceptional cases, this may be 15 years or longer.
