Most of the time when we visit a restaurant or pub around the county we only meet the front of house staff. So we’ve asked local chefs to give us a brief insight into their daily lives and what makes them tick. Daniel: “I have always enjoyed cooking and experimented with food from a very early age, so much so that I turned up one evening at our local pub/restaurant at the age of 14 asking the owner if I could observe him cooking on a Saturday night. He admired my passion and gave me a job. I learnt so much there working every hour I could after school in a busy kitchen environment, I loved it! I left there at 16 to pursue my career. Who would have thought that 22 years later I would be one of the owners with my family, a reminder every day of where it all began.” Matt: “Initially because I knew I would always have a job! After working with food and learning more, I developed a passion for good ingredients and making them into something that people enjoy.” Connor: “ I was working as a pot wash for many years, watching the chefs and taking on board what was going on around me.

One evening my former mentor asked me to help out as they were short staffed, and now I wouldn’t want to work in any other industry.” DESCRIBE YOUR TYPICAL DAY IN THE KITCHEN Daniel: “My typical day in the kitchen is hectic, but I thrive on it. My first job is to make fresh bread for the day and then alongside my team it’s prep, prep, prep. We make all our own sauces, soups, stocks, pastries and desserts, so with two menus running each day between 12-2 and 6-9 its full on. We all have the drive and passion to develop menus and come up with new ideas throughout the seasons, so this is something we are constantly discussing throughout the day.” Matt: “My day starts at 9am, checking off deliveries and making sure I have what I have ordered at the right quality and price! I create the daily special menu and start preparing what my MEP (mise en place) list was the night before! Service starts at 12noon and there isn’t really an opportunity to do anything else once we are in service. Depending on how busy we are decides if I stay all day to catch up on prep for the

weekend, and then back into service at 6pm for the evening. After all the meals are served it’s clean down time and then phone orders put through for the next day. So all in all, a full on 12-13 hour day – not for the faint-hearted!” Connor: “My typical day in the kitchen consists of ensuring all prepared food is correct by the junior chefs and helping them with any issues, whether it is with a recipe or method, as well as setting up our main course section of the kitchen.” WHERE DOES YOUR INSPIRATION COME FROM? Daniel: “My inspiration comes from those ‘ready steady, cook’ moments. I love to have a random selection of ingredients sourced locally wherever possible and just get stuck in and create. I am lucky that I have a good relationship with my suppliers, I can call them and we discuss what’s available. I honestly believe the best ideas are the spontaneous ones.” Connor: “The majority of my inspiration comes from watching other chefs, whether it be on TV or working alongside them. I’ve worked with some very talented chefs, who have helped make me the chef I am today.”

WHO ARE YOUR INFLUENCES? Daniel: “My influences have changed throughout my career. My first influence has to be my mum as she let me loose in the kitchen from a young age, where I developed my passion for cooking. Then gowing up as a chef you buy and see many cookbooks from the greats such as Raymond Blanc and Gordon Ramsay, to name but a few. I believe all successful chefs are influential.” Matt: “My influences are a lot of classically trained chefs such as Raymond Blanc and Rick Stein. They have put the work in and understand how flavours work and all believe in simple food like myself. I have a very good friend who inspired me to begin with, in Hungary (my home country), but after moving to England ten years ago I have learned from other chefs I have worked with – but mostly my inspiration is my fiancée Becky! programmes, she has a great knowledge and passion for food and drink herself and we have ventured many a place together, learning all the time.” Connor: “I follow numerous chefs on social media, where their pages are updated daily with new dishes and recipes. I’d say my biggest influences are Marco Pierre White, Marcus Wareing, Phil Howard and Nathan Outlaw. Each of them has certain ways or styles which makes me want to find my own style.” WHAT IS YOUR BEST ACHIEVEMENT SO FAR? Daniel: “My best achievement so far is being a director in our own business with my family beside me, and of course becoming Chef of the Year at the Lincolnshire Life Taste of Excellence Awards – a very proud moment!” Matt: “Last year finally owning our own business – it has been a great

achievement but also a great learning curve for both of us. We enjoy every minute of working together!” Connor: “Probably moving from Grimsby to Lincoln. It opened more doors for me and gave me the opportunity to come and work with the team at Harbour Lights!” DESCRIBE YOUR FAVOURITE MEAL Daniel: “I don’t particularly have a favourite meal but one of my signature dishes is a Scotch egg, done many different ways. To date the best has to be the pulled pork and Bramley apple Scotch egg.” Matt: “Becky’s fillet steak sandwich with smoked tomato chutney and crispy onions! She made it for me once when I had come in from a long day and it was the best thing I have ever tasted! Actually anything she cooks for me is lovely!” Connor: “I’d have to say an authentic spaghetti carbonara, you can’t beat it!”

Marshall’s Yard prepares to celebrate its 10th anniversary This year Marshall’s Yard celebrates its 10th anniversary and to mark this milestone the shopping centre will be hosting a two-day food festival as part of the celebrations. The festival will take place on Saturday 8th and Sunday 9th April with entertainment across the whole weekend. Local chefs will be showcasing their culinary skills using some delicious regional produce throughout the weekend alongside a food market to tempt your taste buds. The food market will be open from 9am selling local produce including fresh meat, fish, cheese, fudge, wines and ales. As part of the market there will also be a selection of street food including Caribbean cuisine, bubble ‘n’ squeak and a hog roast. The birthday celebrations will

continue as local dance acts and performers such as The Torn and Gainsborough Ukulele Strummers also join in the fun, all making for an amazing show across the weekend. Food lovers will be in for a treat with the chance to sample some local dishes created by some of the region’s restaurants.

The Marshall’s Yard kitchen will be joined by its very own chefs from Root and Cream alongside chefs from NYC Bar and Grill, Adam’s Bay, Vincere Hospitality and The Clock House. Demonstrations will start from 10am giving shoppers a chance to pick up some tips and recipe ideas.

Take part in YellowBelly Trails Select Lincolnshire has introduced a new and exciting way for families and foodies to get out and explore this wonderful county. Introducing the ‘YellowBelly Trails’, which have officially launched. You can now find great places to eat, sleep, explore and discover in Lincolnshire using a special app which sends you on multiple trails across Greater Lincoln. YellowBelly Trails was launched by the Select Lincolnshire team after receiving significant funding from Defra back in December. The aim of the project is to attract even more people to try homegrown food through participating in local fun food trails. Those participating will be able to taste and try new and different recipes, and get excited about all that Greater Lincoln has to offer, which people might not have known about before. Through the app, there is something for everyone including three fantastic routes

New life for The Lawn

which can be followed via cycling, walking or driving. The trail currently features 40 of Select Lincolnshire’s member businesses and Visit Lincoln partners, all renowned for their quality local produce and heritage. After completing on the sale of The Lawn in August, the Stokes team are preparing for the launch of a new coffee roastery and café this spring. The Joseph Banks conservatory has been relocated and an additional 110 parking spaces have been added to support the uphill area of Lincoln. The Lawn will be home to Stokes’ third café, which will have a specially designed viewing gallery, making the roasting process open to the public. Artefacts and trinkets from bygone days will be on display detailing the family business’ past as well as presentations on the history and production of coffee. As well as moving their head office to the building there will also be an accredited barista training centre where trainers will not only teach staff from other businesses about coffee but will also offer classes for the general public wanting to learn about tea or coffee, or how to become a barista, or simply how to make a great cup of coffee at home – these courses make a great gift idea! Great grandson of the original founder, Nick Peel said: “The building will become a place that Lincoln locals will be able to visit and enjoy once again. Whether you drop in for a bite to eat, want to watch the coffee being roasted, come to see a show or take part in a class, we hope you will love The Lawn when we have got things up and running.”

BEETROOT, BLACKBERRY, BROCCOLI & BLUE CHEESE PIZZA

BEETROOT, BLACKBERRY, BROCCOLI & BLUE CHEESE PIZZA Makes 1 large or 2 small pizzas

SHERRY FORBES Member of Select Lincolnshire Ingredients: 125g strong white bread flour 125g wholemeal spelt flour 3g dried yeast 3g salt 1 tsp dried thyme 165g warm water About 1 tbsp olive oil

Pre-prepared toppings: Cooked beetroot, sliced Blackberries Blue cheese, crumbled Red onion, sliced and fried lightly Broccoli florets or flower sprouts Walnuts Sauce: 100ml organic carrot juice, vegetable juice or beetroot juice 40g caster sugar 1 tsp lemon juice Method: Mix the flours, yeast, salt and thyme in a bowl and make a well in the centre

Warm the water and add to the well, mixing to form a sticky dough. Add the oil, mix it in, then turn the dough out onto a clean work surface. Knead until smooth, silky and elastic (about 10 minutes). Shape the dough into a round ball and return it to clean bowl. Cover with cling film until doubled in size (if using proving box this will be about 30 minutes). Pre-heat oven to 220°C, or as high as it will go. Have all your toppings laid out in little bowls. Divide dough into two balls if

using two small pizzas. Sprinkle polenta on pizza tray or butter a non-stick pizza tray. Stretch or roll the dough to the required size and lay it on the pizza tray. Put the toppings on the pizzas before baking. Bake at 220°C for about 20 minutes. Meanwhile prepare the sauce by stirring the juice and caster sugar in a small saucepan over low heat for 5 minutes or until the sugar dissolves. Bring to the boil and simmer rapidly for 5-6 minutes or until thick and syrupy. Stir in the lemon juice. Pour over pizza just before serving. Cut your pizza and enjoy! Love Food Select Lincolnshire

LINCOLNSHIRE ASPARAGUS SPEARS WRAPPED IN DRY CURED FEN FARM VENISON BACON WITH DAIRY FREE HOLLANDAISE SAUCE This dish makes for a picture perfect fantastic brunch, or even a sumptuous starter which will leave you wanting more.

RONNIE OWNSWORTH Member of Select Lincolnshire Ingredients: 18 thin Lincolnshire asparagus spears 1 pack (6 rashers) Fen Farm Venison Dry Cured Bacon Drizzle of Ownsworth’s rapeseed oil Hollandaise Sauce (dairy free): Make this quick and easy version in a liquidiser! 3 egg yolks 5 peppercorns 1 small bay leaf Pinch of mace 50ml Skidbrooke Cyder apple cider vinegar 100ml Ownsworth’s Rapeseed Oil Pinch of salt Method: Wrap one rasher of bacon around a bundle of three asparagus spears until you

have six parcels. Drizzle some rapeseed oil into a large frying pan and bring the oil up to a medium heat. Place the asparagus parcels in the rapeseed oil and cook gently whilst you make the hollandaise sauce, keeping an eye on them and turning them over to cook evenly and until the bacon is slightly crispy. Put the three egg yolks into a liquidiser with the salt and pulse a couple of times to combine. Next put the apple cider vinegar, bay leaf, peppercorns and a pinch of mace into a small pan and heat up until the liquor reduces to one tablespoon. Remove the bay leaf and pour the peppery vinegar into the egg mixture and pulse for a few seconds to combine. Using the same pan you warmed your vinegar up in – pour in the rapeseed oil and heat the oil until it is just bubbling. Remove the pan from the heat and drizzle the hot oil slowly into the liquidiser whilst blending. Your hollandaise sauce should be thick and creamy! Place two or three asparagus and bacon parcels on a plate with your side of dairy free hollandaise sauce. Serve immediately. Serving suggestions: Hollandaise sauce is great with poached salmon.

PAN-FRIED FILLET OF MACKEREL WITH SPAGHETTI VEGETABLES AND APPLE CIDER MAYONNAISE This dish uses local and English ingredients and is perfect for a light lunch or supper and serves 2 people. Tip: Add minty local new potatoes to transform this.

RONNIE OWNSWORTH Member of Select Lincolnshire Ingredients: 2 mackerel fillets 2 tablespoons Maud Foster stoneground plain flour Salt and ground black pepper Ownsworth’s Rapeseed Oil 1 carrot (washed and peeled) 1 green courgette (washed, topped and tailed) 1 cooked beetroot (chopped up into cubes) 2 tablespoons Fred & Bex Blackberry Vinegar Mayonnaise: 2 egg yolks 2 tablespoons Skidbrooke Cyder apple cider vinegar Pinch of salt and pepper 300ml Ownsworth’s Rapeseed Oil ½ tsp Colman’s mustard powder Method: Put the egg yolks into a large mixing bowl with a pinch of salt and pepper and stir to combine. Next drizzle in the rapeseed oil a bit at a time and whisk with a hand whisk for a couple of

minutes until the sauce becomes thick and smooth. Finally add the apple cider vinegar and mustard powder and whisk gently – this is a delicious light tasting mayonnaise and the apple cider vinegar is something special! Using a spaghetti vegetable peeler or spiralizer, create the carrot and courgette spaghetti, then place the vegetables in a microwaveable bowl and pour over two tablespoons of blackberry vinegar, mix together and cover with a plate. Microwave for 2 minutes and keep warm. Put two tablespoons of Maud Foster plain flour onto a large plate, add a pinch of salt and ground black pepper and stir to combine. Press the two mackerel fillets onto the seasoned flour to coat the skin side, then turn over and repeat with the flesh side, ensuring you have an even coating of the flour on both sides. Drizzle a little rapeseed oil into a large frying pan and heat to a high heat. Place the mackerel fillets skin side down, carefully pressing the fish flat into the rapeseed oil. Cook for 2 to 3 minutes until the skin is golden and lightly crisp, flip over and cook the flesh side for a couple of minutes until soft and cooked through. For each person, heap up half of the vegetable spaghetti, surrounded by beetroot cubes. Place a dollop of apple cider mayonnaise on the side, then positon your mackerel fillet on top. Vegetarian Option: Sprinkle paprika and garlic powder onto tofu as your mackerel substitute. PAN FRIED FILLET OF MACKEREL WITH SPAGHETTI VEGETABLES AND APPLE CIDER MAYONNAISE

Katrina Burrill visits some of our county’s finest pick your own farms. In recent years I have spent many a weekend visiting just a few of the pick your own sites across the county, taking away some tasty fruits to make an array of sweet treats. We hear daily about the benefits of eating fresh fruit and vegetables and the growing popularity of farmers’ markets. Pick your own farms allow us to pick fruit and vegetables fresh from the fields. Over the years farmers have had to diversify and reinvent their businesses and their unique sales message. I went along to meet Bridget at Spinney Farm, just north of Doddington in her farm shop. Bridget bought Spinney Farm in 1991 and in 1994 began selling potatoes after meeting her partner, John, who looks after the fields. In 1996 they opened their first farm shop and by 2010 they had built their current shop, custom made for all their fresh produce. The farm shop is now full of freshly grown and picked vegetables including several varieties of potato, cauliflower, cabbages, parsnips, leeks, onions, rhubarb, asparagus, as well as English salad. They also grow and pick gooseberries, and red and blackcurrants. It was in 2002 that Bridget and John decided to introduce pick your own to the farm. After noticing how busy they were during the winter months they wanted to bring more custom in during the summer and began with raspberries. In 2007 they introduced their strawberry fields and since then they have never looked back. Aside from the outdoor fields they also grow strawberries in polytunnels, which means they can still open if the weather is not good during the pick your own season. Bridget said: “I first bought the farm to have a livery, but when I met John he told me it wouldn’t be as profitable so we first introduced potatoes, which we sold from our small shop next to the horses. Since then the farm has grown beyond our twelve-and-a-half acres and we now rent more land to grow our potatoes, which are still our biggest sellers. very lucky since we opened and many of our customers have been coming to us for over twenty years. “Summers are extremely busy for us, and we spend many days during the pick your own season being car marshals, trying to accommodate all our visitors. During the holidays and on weekends it’s not unusual for cars to park down the road. The shop has also grown over the years but we want to stay true to our roots being a farm shop and just selling fresh produce; although we do sell some chutneys and honeys for local residents, the rest is ours and we are proud of what we do.” Further north in the county I went to meet Pete at his family’s farm Peaks Top, which is in New Waltham between Grimsby and Cleethorpes. Pete is the fourth generation of W Clayton and Son who have been at the farm since the 1920s. When the family first moved to the farm they focused on beef and dairy farming before moving to arable and fruit farming. With over two hectares dedicated to strawberries, which use a table-top growing system, the farm is also home to five polytunnels in which they grow raspberries. There are also plenty of bushes and hedgerows where customers can pick gooseberries and red and blackcurrants. Pete said: “After over thirty years of pick your own we realised we had to diversify and have adapted the farm to build the business. We are in a very good location for passing trade. We opened our farmhouse bed and breakfast and we grow Christmas trees, so customers can come to the farm and choose their own tree from either the traditional Norway Spruce or the more modern Nordmann Fir, which hold their needles for much longer. “Our biggest project has to be our fruity wines, which we started making in 2014. We

have always had more fruit than we could sell in the short picking season, and also wastage which we were keen to reduce, and so the idea of creating our wines began. The wine doesn’t need perfect fruit so we can reduce what isn’t used, and currently about forty per cent of our crops go into making the wines. We currently produce six permanent varieties: apple, blackcurrant, bramble, gooseberry, raspberry and strawberry. We also make limited edition flavours such as sloe, elderflower, plum, redcurrant and rhubarb.” If you would like to try some of the Clayton family’s Fabulously Fruity Wine you can pick up a bottle in the local produce aisle at your local Co-op or at various shops throughout the county. RASP ERR FRO- O Serves: 6 Ingredients 350g raspberries, washed and dried 500g Greek yogurt 200g condensed milk Method: Put the washed raspberries in a lidded container and freeze until solid. Once solid put them in the food processor and blitz until finely chopped. Take out 3-4 tbsp and keep in the freezer until you serve. Add the Greek yogurt and condensed milk to the processor and whiz until everything is combined. The raspberries will have frozen the other ingredients so to serve ‘soft scoop’ straight away or tip into a freezer container to firm up. Serve scoops with the raspberry bits sprinkled over the top.

BAKED GOOSEBERRY, ELDERFLOWER AND CRÈME FRAÎCHE CHEESECAKE Serves 8

RACHEL GREEN Member of Select Lincolnshire Ingredients: Butter for greasing 250g cream cheese 250g mascarpone 225g caster sugar 3 medium eggs 2 tbsp cornflour 5 tbsp elderflower cordial 400g gooseberries, topped and tailed BLACKCURRANT AND ALMOND TART Serves 8

RACHEL GREEN Member of Select Lincolnshire Ingredients: 75g unsalted butter, cut into small cubes and slightly softened 200g plain flour 75g caster sugar 25g ground almonds Zest of 1 lemon (optional) 1 medium egg 125g unsalted butter, softened 3 tbsp blackcurrant jam 125g golden caster sugar 125 ground almonds 1 large egg 250g fresh or frozen blackcurrants, without stalks Icing sugar for dusting Cream or crème fraîche, to serve 23cm tart tin, 3cm deep

200g tub crème fraîche A few drops of vanilla essence 75g butter 200g ginger snap biscuits, crushed to fine crumbs 2 tbsp light brown muscovado sugar Method: Preheat oven to 150°C/300°F/Gas 2. Lightly grease the base of a 23cm springform tin. To make the base, melt the butter in a medium saucepan over a low heat, add the biscuit crumbs and light brown sugar, mix together. Using the back of a spoon press the mixture evenly into the base of the tin. Set aside. Beat the cream cheese, mascarpone and 150g caster sugar Method: Preheat oven to 180°C/350°F/ Gas 4. Place the butter, flour, sugar, ground almonds and the lemon zest, if using in a food processor. Blend for a few seconds then add half of the beaten egg and continue whizzing. You may need to add a little more egg; the pastry should just come together. Alternatively if making by hand, rub the butter into the flour, add the sugar, ground almonds and lemon zest and bind together with the egg. Wrap or cover the pastry and place it in the fridge for 1 hour. Allow the pastry to come to room temperature for a few minutes. Thinly roll out the pastry on a lightly floured surface, line the tart tin. Bake blind by lining the pastry with greaseproof/parchment paper. Fill with baking beans and bake for 15-20 minutes until the pastry feels dry to touch. Remove the paper and beans and return to the oven for 5-10 minutes or until starting to colour.

together in a bowl until smooth. Beat in the eggs, one at a time, followed by the cornflour and 3 tablespoons of elderflower cordial. Pour the mixture into the tin and bake in the oven for 50 minutes until set; it should just wobble in the centre. Turn off the oven and leave to cool inside; this will prevent the cheesecake from cracking. Put the gooseberries, 25g of caster sugar and the remaining elderflower cordial into a saucepan and bring to a simmer. Cook gently for 5 minutes until they are just soft but still holding their shape. Tip into a sieve and set over a bowl and leave to drain. Tip the syrup back into the pan and boil rapidly until reduced to 2 tablespoons. Tip the gooseberries into the bowl and stir

in the syrup, leave to cool. When the cheesecake has cooled, remove from the oven. Re-set the oven temperature to 150°C/300°F/Gas 2 and place the cooked gooseberries evenly over the top of the cheesecake. Mix the crème fraîche with the remaining 50g caster sugar, vanilla essence and spread over the top of the gooseberries to cover completely. Return the cheesecake to the oven and cook for a further 15-20 minutes. Again turn off the oven and leave to cool inside. Cover with cling film and transfer to the fridge for at least 4 hours. Before serving, carefully remove the cheesecake from the tin, place on a plate and serve with cream.

Take out of the oven and set the pastry aside while you prepare the filling. When the pastry case has cooled, spread the blackcurrant jam on the bottom of the pastry case. For the filling, cream the butter and sugar in a food processor until light and fluffy, add the ground almonds and egg and mix to a smooth cream. Transfer to the

pastry case and smooth the top. Scatter the blackcurrants over evenly and bake for 45 minutes or until spongy, golden and firm. Leave to cool then dust with icing sugar. Serve with crème fraîche or cream. * Keep an eye on the pastry when baking.

CARAMELISED PUFF PASTRY, WHITE CHOCOLATE, PISTACHIO AND RASPBERRY MILLEFEUILLE Serves 6

STEVE BENNETT Member of Select Lincolnshire Ingredients: 350g readymade puff pastry 50g icing sugar 30-40 raspberries soaked in 50ml Cointreau 100g white chocolate 50g mascarpone 300ml double cream 1 tbsp pistachio paste or 1 tsp pistachio essence 3 tbsp condensed milk 200ml double cream 50g mascarpone 100g raspberries 50g caster sugar

Not only does this dessert and sweet treat look pretty and taste delicious, but it’s super simple to put together, and all of the components can be made ahead of serving to save time! Raspberries are generally available in British supermarkets all year round and sourced from within the UK. Raspberries need a steady heat to grow, and are produced in heated greenhouses throughout the colder months, meaning these delicious fruits are available from January through to December. If you can’t get hold of fresh raspberries, you can replace them with frozen raspberries. Method: Preheat your oven to 180ºC before rolling out your puff pastry onto a greased baking sheet. Cover with icing sugar and place another baking sheet on top with some heatproof light

weights. Bake for 20 minutes until crisp and golden, and cut into 12 equal rectangles. Leave to cool before placing in an airtight container until ready to serve. To make the chocolate cream, melt the white chocolate and 50ml of cream over a bain-marie. Once melted, place into a bowl and whisk together with the mascarpone, before adding the remaining 250ml double cream and whisking together until it forms a semi whip. The cooling of the chocolate will do the rest of the work and set it even further. Place into a piping bag and place in the fridge. Make the pistachio cream by mixing the mascarpone, condensed milk and pistachio paste together with an electric whisk. Add the double cream, and whisk together until thickened. Place into a piping bag and place in the fridge. Using condensed milk in sugar

helps to eliminate any graininess, giving a smooth and sweet consistency. To make the raspberry purée, blend together fresh raspberries and 50g caster sugar. Pass through a sieve and leave with the other ingredients until ready to serve. To plate each millefeuille, splatter a tablespoon of raspberry purée on a plate and place one of the caramelised rectangles of puff pastry on top. Alternate between piping white chocolate and pistachio cream with fresh soaked raspberries to fill up the first layer. Place another rectangle of the caramelised puff pastry on top of the first layer and repeat, topping with the third and final rectangle of puff pastry. Repeat this method for the remaining 5 millefeuilles and save any leftover purée or cream in the fridge, storing for up to 3 days. Love Food Select Lincolnshire

Enjoying a secluded spot just across from the banks of the river Humber, this 16th century plot is home to both a Michelin recommended restaurant and 14 boutique, 5-star rooms. But what is truly novel and refreshing about Winteringham Fields is its reinvention of the whole concept of fine dining. We spoke to head chef and owner, Colin McGurran, to discover the Winteringham Fields experience. “We want to redefine the restaurant, and we’re building something different here that will put us, and Lincolnshire, on the map. Because we

believe fine dining is much more than just satisfying hunger pangs. Ours is a journey – a four to five-hour, ever-changing gastronomic experience. Tastes you’ve never come across, combinations you’d never dream of: we make it real.” Colin and his team’s journey comprises seven to nine surprise courses, meticulously accompanied at every stage by a master sommelier’s wine selection. Aside from this ambitious, imaginative vision, perhaps one of the biggest elements of surprise is the very nature of the menu. Nature being the operative word. Seasonal vegetables, herbs, shoots and a small selection of livestock are sown,

grown, reared and nurtured organically on their personal farm. While fish and everything else is carefully sourced from the best local purveyors. The result is a menu that is not only inspired by nature and the seasons, but changes with it. Sometimes even daily. “Every day is a surprise. We get to the farm in the morning and whatever’s ready and at its best, we’ll use it that day. So our food is always evolving, always surprising and always challenging us, as well as our diners. “Most importantly, because we grow them here and now on our doorstep, we know the ingredients we’re cooking with are the freshest possible. That’s essential for us because we’re constantly striving for perfection.”

For Colin, this pursuit of the perfect fine dining experience is also a deeply personal one. “Ultimately, Winteringham Fields is an expression of my personality and my hospitality. I want people to ‘feel’ they’re eating my food and a part of my personality. “Cooking is an extremely personal thing. It reflects your feelings, thoughts and ideas at that moment. If you feel insecure about the dish, the customer will feel that on the plate. So you have to be confident, and the only way to do that is to be free and have no rules. ‘If you go down to the woods today…’ The familiar nursery rhyme conjures fun walks on the wild side. Now grown-up, an engaging stroll in a dappled forest, alive with birdsong, stirs childhood memories. plantations of pine and silver birch trees had flourished as Woodhall Spa was developing. She chose to build an extravagant Art & Crafts home there, ‘Petwood’. She commissioned a landscape architect (with an apt surname as it happened) who had grown up at Somerleyton Hall, in Suffolk, inspired by Neo-Renaissance winter gardens and parterre by leading

Victorian designer, W A Nesfield. By 1912, Harold Peto (1854-1933) had laid out and completed an extensive garden brimming with colour. Only three years later, fine photographs in Country Life’s glossy pages, reveal an eclectic mix of floriferous abundance with rose-laden pergolas for height and structure, softened by myriad Love Food Select Lincolnshire

climbing pink roses, laburnums and wisteria, and azalea and rhododendron borders already merging charmingly into its woodland setting. This ‘young, fine well-planned garden, just entering upon its fragrant career in a pretty Lincolnshire cure-place’ surely brought hope and respite to World War I readers. Now a popular hotel, Petwood still reflects Peto’s recognisable dynamic and Italianate blend of both formal and natural gardening, though many statues and urns have long since disappeared. A more recent sculpture, as if Alice, a young girl, with a butterfly, is the focus west of the house in Peto’s setpiece sunken garden, centred by a rectangular pool. Sadly, with the passage of time and even occasional vandalism, upkeep of the grounds has proved challenging. In 2011 the owners embarked on a major restoration, led by landscape architect Johnny Park, founding director of Park Hood Associates, based in Belfast. Smart new entrance gate piers and replacement of the fine, shady portico and terrace balustrade lift the ambiance. Director Emma Brealey explained: “It is essential that the work we do

with this project can be maintained, not just by us but by future generations.” Re-paved, still with occasional eye-catching millstones, and once more flanked with pergola poles, the axial ‘Long Walk’ divides possibly the longest, herbaceous borders in the county. Over 2, 500 new plants, promising colour from March to October, will entice visitors towards the Round Pool and original Renaissance cherub. They will doubtless pause and ponder a more recent fountain in memory of Princess Diana, on the way east to Peto’s theatrical Temple Garden. Here one can easily imagine strains of band music, laughter, and applause from many a concert, amateur dramatics or fundraising fête. ‘La pièce de la Résistance’, the long-lost classical Temple of Atalanta, the virgin huntress of Greek mythology, is once more! Framed by woods in the heart of the garden, again set off by pergolas, six columns support an ironwork dome topped by fleet-footed Mercury, Roman god of travellers. The rhododendron-edged reflection pond mirrors this memorable vista.

The old swimming-pool, surrounded by its original decorative ironwork, is to be transformed with a focal relic, Barnes Wallis’s Bouncing Bomb code-named ’Upkeep,’ a move that will contrast the garden’s rather feminine overtones. A Memorial Garden, recalling the WWII period when Petwood was requisitioned as a Royal Air Force Officers’ Mess, will pay tribute to members of 617 Squadron, the ‘Dambusters’, including Group Captain Sir Leonard Cheshire. Other than in Scotland, the much-loved garden is the most northerly example of Peto’s works from his most celebrated period (1900-1914). The local community welcomes this revival. Refreshingly recharged, long may it provide enjoyment, much-needed rest and recuperation. Lured outside by fresh air and flowers, visitors of all ages, free to wander paths across open lawn and into woodland shade, fall under Petwood’s spell. Uplifted by the peace, and having sensed the spirit of associations past, they return fully restored for that civilised, English tradition – afternoon tea! Member of Select Lincolnshire

Now in its eleventh year, the shop is producing meat products, homemade meat and fruit pies, pork pies, cooked meats and black pudding to a very high quality and with ever

increasing ranges. Quality is the key to their success believes Stephanie and she is firmly of the opinion that all the produce at the farm is of a standard and presented in a way that she would like herself. Not only this but it is the proud boast of this team that everything is produced on the farm. At this farm, the customer comes first with any individual butchery request readily granted and speciality cuts and orders are always catered for. The business is expanding too with Stephanie having developed a new commercial venture into homemade jams and preserves. Again, all the ingredients are home produced from fruit trees on the farm site and all her pastry is homemade.

MINTING PARK FARM MEAT PRODUCED THE WAY IT SHOULD BE

Situated near Gautby, the 600 acre farm is home to a herd of 200 head of Hereford cattle and suckler cows, sheep, free range chickens and – something of a rarity today – British Lop pigs. The Lop pig is a rare breed and, due to its ability to produce top quality pork along with the capacity to be brought up to bacon weight without laying down too much fat, it is an excellent choice for Henry and Stephanie. There is an arable side to the business too with the need to provide animal feeds such as grass, beans, barley and wheat. Adjoining the farm shop, a very tasteful eating area has been created called ‘The Harness Room’. It is a delightful room seemingly caught in a time warp and festooned with saddles and harnesses which exude a beautiful smell of leather. An excellent

Stephanie and Henry are keen to make it known that visiting groups are most welcome by arrangement. Areas of interest do vary depending on the groups concerned but butchery demonstrations have a following and seeing farm animals close up will always be popular with children. Minting Park Farm is situated in a lovely part of the county and with such superb produce on sale, butchery to order and an excellent dining area, this venue makes for a first class outing. After randomly meeting at Newark train station back in 2010 and immediately becoming good friends, John Cussons and Mike Holman began planning their business concept for brewing quality craft ales and lagers. Fast forward to 2016 and the plans were put into reality as Ferry Ales Brewery sprung to life. Select Lincolnshire caught up with John from Ferry Ales Brewery to find out how two businessmen came together to build a brewing business in rural Lincolnshire….. So John, how did the concept for Ferry Ales Brewery come about? Mike and I first met in 2010 at Newark train station whilst commuting to London, but it wasn’t until a commute years later in April 2015 that we shared our plans for starting our own brewery business. From then on, those early morning and late night commutes became our planning meetings. Both of us had bought brewing equipment, read endless books on the subject and attended courses to learn the craft of whole grain beer making. What were your jobs before all of this? I worked in London in the world of corporate law, although I’m not a lawyer, and Mike was a project manager and running a web design and e-marketing company in Lincoln. So how did you put the wheels in motion? In early 2016 we applied for a grant through the Lindsey Action Zone to fund our equipment and although the Brexit vote held up the decision, we were finally successful in getting the grant in July 2016. Work then began in earnest to turn a redundant barn on our small holding into a brewery. We also partnered with ABUK who provided all the equipment and in October 2016 the first brew was produced. What are your main products? We currently have four core beers. Just Jane is our session bitter at 3.8%. We have our Best Bitter 49

Squadron at 4.9% which is named after the squadron of Lancasters that flew from the nearby airfield. Witham Shield is an American style pale ale at 4.5% and Smokey Joe is a lightly smoked porter. We also have some special and seasonal beers including a Pilsner style lager called Lincoln Lager and a Rye Beer named Slippery Hitch. How do you create them? We research. We also talk to friends and family about what kinds of beer they like or don’t like. This often requires us to taste a number of beers – a tough job but someone has to do it. We look into the types of grain and hops used and then start to develop ideas. How do you source the ingredients/ components of your products? We currently source our grain from a small maltsters as they still use a traditional floor malting process. They are the oldest maltster in the UK and because of their size, they are happy to work with smaller breweries. We use a mixture of UK, European and North American hops, but other products are sourced more locally including from Murphy and Sons in Nottingham. We always look for local companies to partner with and this was one of the key reasons for joining Select Lincolnshire – to build relationships with other local producers. Do you engage with any other community groups e.g. education, charity? We are keen to try to support the local community in different ways. Mike grew up in Nettleham and my wife grew up in Cherry Willingham so we both have a strong connection to the area. Our site is actually located close to a former Lancaster bomber airfield, and because of this

we partnered with the Lincolnshire Aviation Heritage Centre who are currently restoring the Just Jane Avro Lancaster NX611, to create our ‘Just Jane’ beer. Every 10p from a pint sold will go to the charity. Have you any tips for using your products? Currently our bottled beer is conditioned in the bottle, which means there will be a little sediment in the bottle. It means that you need to leave the bottle to stand for a few hours and then pour it gently and leave a little bit in the bottle so you don’t get the sediment. Also, one of the great things about producing beer is that it allows you to experiment with flavours. Mike has produced excellent fish and chips using 49 Squadron in the batter. What are your plans for the future? We are installing a bottling machine which will improve the quality of the shelf life of our bottled product as well as improved efficiency. This will then allow us to supply a great range of shops, restaurants, hotels, markets and our own web sales. The bottling machine will also allow us to fill a variety of keg sizes, which will be great for customers holding parties who want real ale on tap. What is your ultimate goal? To grow the business to employ more staff locally and to build an on-site tasting room in the future. It would be great if the volume of sales means we need to expand the existing equipment. Heritage Lincolnshire revives inn An at-risk Tudor inn dating back to 1599 is being rescued by Heritage Lincolnshire thanks to a Heritage Lottery Fund (HLF) grant. The Grade II listed Old King’s

Head in Kirton, Lincolnshire, is a significant 16th-century inn with a rich history and many stories to tell. Currently standing vacant and in urgent need of repairs, a Heritage OLD KING’S HEAD, KIRTON

Enterprise grant of more than £2 million will enable the building to be restored and brought back into use, providing jobs, trainee opportunities and a boost to local tourism. Heritage Lincolnshire has an excellent track record in saving historic buildings for new uses and has received HLF support to secure the future of the building, which has now been purchased by the charity. It will be repaired, refurbished and revived as an artisan café and boutique bed and breakfast.
