This dish originated in Mexico city. In the 1900’s Lebanese merchants immigrated there and introduced the concept of shawarma. The typical preparation is similar to that of Turkish Döner Kebap or Greek Gyros.

Ingredients PDF FOR 2 SERVINGS 4 tbsps Al Pastor Spice Mix 4 Pork Chops 6 Corn Tortillas 1 Orange 1 Tomato 1/2 diced Onion 1 cup Pineapple 2 Tbsp Vinegar Harissa Mix includes Achiote, Guajillo Chili, Cumin, Oregano, Garlic, Clove, Chipotle Chilie

Add Al Pastor Spice Mix, orange, tomato, vinegar and 1 cup of water in a blender and mix until a creamy sauce is produced.

Cut pork chops into small cubes and place in a bowl. Mix marinade with pork cubes and refrigerate for 20 mins.

Heat up oil in a pan. Add marinated pork and diced onion. Cook for 15 mins until pork cubes are fully cooked.

Heat up oil in a separate pan. Add pineapple pieces and cook them for 5 mins until edges turn light brown.

Place corn tortillas in a flat pan. Heat them up at low heat for 2 minutes on each side, so they get equally soft but not crispy. Serve meat and pineapple on warm tortillas. Add cilantro & lime.
