One of the things I get most requested for is healthy, easy, PORTABLE lunches, so today, that’s what I’m giving to you! You can put almost ANYTHING in a mason jar–so why not a salad? I prefer to layer my ingredients in– beans on the bottom, veggies/fruit in the middle and then greens on top. Place your greens in last so they don’t get soggy. I always add dressing in at the time of eating rather than before to keep the veggies crisp! The recipes below are just a few fun options you can experiment with for meals-in-a-jar!

COBB Salad In-A-Jar • ⅓ cup diced tomato • ¼ cup diced onion • 4 oz chicken breast • 1 boiled egg • 2 slices bacon, chopped • 2 Tbsp blue cheese • 1 ½ cup lettuce/greens • ¼ avocado • vinaigrette dressing (served on the side)

Cottage Pasta Salad In-A-Jar Dressing/Pasta: • ¼ cup low fat cottage cheese • 2 Tbsp Greek yogurt • ½ tsp olive oil • pinch of salt & pep • 1 cup cooked pasta (whole wheat, brown rice, or quinoa pasta are nutritious choices) Toppings: • ¼ cup zucchini • ¼ cup diced tomato • 2 Tbsp diced onion • 1 slice bacon

Burrito Bowl In-A-Jar • 2 Tbsp salsa • ¼ cup beans/bean salsa • ½ cup brown rice • 3 oz ground turkey, cooked in taco seasoning • 2 Tbsp low-fat shredded cheese • 1 ½ cups lettuce/greens • 1 Tbsp Greek yogurt • ¼ avocado
