Directions In a small skillet heat the butter over medium heat. Once melted, add the onion and cook until tender, about 4 minutes. Then add the diced tomatoes, garlic, oregano, fennel, salt, and pepper and cook until fragrant, about 1 minute. Directions In a medium skillet over medium heat add the butter. Once it melts add the onion, celery, and carrot and sauté until tender, about 5 minutes. Transfer the sautéed vegetables to the Personal Power Blender along with the remaining ingredients. Blend until smooth, about 20 seconds, then pour the soup into two microwave safe bowls and heat for 1 minute. Stir well, then heat for 1-2 minutes more, or until hot.
