dill pickles ingredients
• 8 lbs of 3- to 5-inch pickling cucumbers • 2 gals water • 1-1/4 cups canning or pickling salt (divided) • 1-1/2 qts vinegar (5%) • 1/4 cup sugar • 2 qts water
• 2 tbsp whole mixed pickling spice • 3 tbsp whole mustard seed (1 tsp per pint jar) • 14 heads of fresh dill (11/2 heads per pint jar) or 4-1/2 tbsp dill seed (1-1/2 tsp per pint jar)

Wash cucumbers. Cut 1/16-inch slice off blossom end and discard, but leave 1/4-inch of stem attached. Dissolve 3/4 cup salt in 2 gallons water. Pour over cucumbers and let stand 12 hours. Drain. Add vinegar, 1/2 cup salt, sugar, and mixed pickling spices (tied in a clean white cloth) to 2 quarts water. Heat to boiling. Fill hot, sanitized jars with cucumbers. Add 1 tsp mustard seed and 1-1/2 heads fresh dill per pint. Cover with boiling pickling solution, leaving 1/2-inch headspace. Remove air bubbles and adjust headspace if needed. Wipe rims of jars with a dampened clean paper towel. Adjust lids and process in a boiling water canner for 15 minutes (20 minutes for quart jars). Yield: About 7 to 9 pints, or 4 quarts

For September, we are featuring Kalamata olive wedges! Kalamata olives are named after their town of origin in Peloponnese region of Greece. They are picked by hand and packed in a brine of salt water and red wine vinegar. Kalamata olives contain relatively high levels of oleic acid, which has antiinflammatory effects and improves vascular function.
Goat Cheese Kalamata Dip ingredients
• 1/2 cup DIVINA Pitted Kalamata olives, drained, chopped • 10 oz Soft goat cheese, room temperature
• 2-3 tbsp Milk • 1/2 cup Pecans • 1 tsp Fresh thyme, finely chopped • 1/4 cup Honey
directions
Mix goat cheese until softened and spreadable, adding 1 tbsp of milk at a time as needed. Mix olives, nuts, herbs, and honey in a bowl. Spray small bowl with cooking spray or line with plastic wrap Add 1/3 of olive mixture, or enough to cover bottom of bowl, followed by 1/3 of cheese mixture, or enough to completely cover olive. Repeat with remaining olive mixture and finishing with remaining cheese. Chill until firm, at least 1 hour Invert onto serving dish, remove bowl
