Sunset Vegetables

Use your favourite combination of vegetables to make this beautiful dish. If you'd like to add some protein sprinkle the finished dish with crumbled strong cheddar or goat cheese, or some toasted nuts. Preheat oven to 400.

You'll need a large baking sheet, or two small ones, so the vegetables can fit in a single layer.

Dump onto the baking sheet any combination of the

following, totalling about 6 cups. Cut your vegetables into 1 inch chunks.

Small turnips Heirloom carrots Multicolored beets

Sweet potatoes White or red onions

Add a few garlic cloves, peeled and left whole.

Drizzle the vegetables with about 2T olive or vegetable oil

Seasonal generously with salt and pepper. Roast 20 minutes. Stir together 3T maple syrup 2 T balsamic vinegar Drizzle this glaze over the vegetables, stir them about, spread them out again and roast a further 15 minutes, or until they are browned and tender.
