EASY FRIED RICE
3 cups brown rice, cooked 1 T coconut/olive oil ½ cup onion 2 garlic minced 1 24oz bag mixed frozen veggies salt & pep 3 Tbsp soy sauce 1/2-1 tsp sesame oil

Saute onion and garlic in olive oil, until translucent. Add frozen vegetables and allow to heat and soften, around 6-8 minutes. Add rice, soy sauce & sesame oil, seasoning to taste. • Devour!

SOUTHWEST BEAN SALAD
CREAMY TOMATO SOUP
1 15 oz can black beans 1 15 oz can pinto beans 1 15 oz can corn 1 red bell pepper 1 green bell pepper ½ cup tomato diced, or salsa 2 limes, juiced 2 Tbsp cilantro (to taste), optional 1 tsp chili powder ¼ tsp salt
1 28 oz can tomatoes 1 onion 3/4 cup cashew milk (or other) 3/4 cup water 1 tsp salt 1 tsp oregano

Add all your ingredients into a mixing bowl and mix well to combine. Serve on lettuce wraps, tacos, plain as a salad, or on greens! Delicious garnished with avocado!
