Within this brochure you will see how versatile By Ambience is, which is why we are one of the leading Caterers within Sussex and the surrounding area.


Each couple and wedding are treated individually as everyone is different. Our first question is what are your likes and dislikes, these can be in Style, Barns, Manor Houses, Venues, Vintage, Modern, or even down to the food. We are fully flexible and within this pack are just a few ideas to consider, if it is not listed here it does not mean we don’t do it, so please just ask. Kind Regards,

By Ambience is an established event, wedding and business catering company based in Sussex. As well as creating delicious food for a variety of events in London and the South East, the team at By Ambience will work with you to ensure the smooth running of your special day from start to finish. We’re proud to offer bespoke packages, we will liaise with you to discuss your precise requirements, whether it be a traditional sit down meal, or something far more individual!


If it’s a traditional wedding breakfast, that’s great we have a variety of dishes that have been developed by our team of creative chefs, however we also offer BBQ’s, hog roasts and afternoon teas for main courses, just to name a few, what about a Medieval Themed Banquet? At By Ambience we only use fresh, quality ingredients, which are sourced locally in Sussex wherever possible, meaning you can be assured we will provide a treat for you and your guests taste buds. Gary Williams Director Gary’s passion for food started at a young age and he’s been developing his craft in the catering and hospitality arena ever since. Gary has worked within award-winning gastro pubs, prestigious golf clubs and fine dining restaurants. He brings meticulous attention to detail and a flair for flavour and taste creation. By Ambience was a natural next step for Gary as he continues to hone his skill and passion to bring clients the very best in service as well as fresh and delicious food. 03300 58 10 10

Ash Sullivan

Catering Manager

Ash has been involved in the catering industry for a number of years, gaining experience in high-end hotels, fine dining restaurants and big brand operations. Ash has been awarded the Master Chefs of Great Britain advance training diploma and was lucky enough to have a two week trip to the highly acclaimed Johnson and Wales University of Charlotte, USA. Ash brings from his experience an individual flare to all the By Ambience menus and dishes.

Dryden Mitchell Events Manager Dryden has over 20 years’ experience in the hospitality and catering industry, from working in five star hotel restaurants to catering for large scale events. He has worked on the past three Olympic Games in Various Food & Beverage Management Roles. Dryden has a deep passion for working in the event industry which is reflected in his dedication, energy and enthusiasm.

There’s a lot to think about – outfits, the venue, decorations… at least choosing your dream menu with By Ambience is fuss free! With a variety of choice on offer, our team of wedding experts will help you select your perfect food option.


What’s more, all of our catering options are bespoke, meaning our team of experts will meet with you before the big day to discuss what your perfect menu looks like, tasting as we go. Unsure what your guests will toast your marriage with? The Ambience bar is great way to organise liquid refreshments for outdoor weddings and is the perfect accompaniment to a marquee, festival themed or barn wedding. Our team of wedding caterers know that while having tasty food is important, your guests also need to be fed on time for a smooth reception. We work closely with your venue and wedding planners to ensure your day goes without a hitch and the timings are just right. At By Ambience, we know it isn’t just fantastic food that will make your wedding memorable, it’s seeing the smile on guests’ faces and enjoying a seamless, hassle free celebration.

By Ambience has been awarded with a five star hygiene rating for wedding catering so you can be rest assured that we have impeccable hygiene standards throughout our operations and at events. We have £5m Liability Insurance and as such take safety extremely seriously. Our staff are also fully trained to adhere to the strictest hygiene standards.


We have a large inventory of equipment which allows us to cater for many events, including front and back of house, as well as mobile food and bar units. While we’re based in Sussex, the By Ambience team also regularly travel further afield to cater for events across London and the South East.

Set Up –Day Before We will meet with you to receive all table decorations, set up a single table together, name cards to match table plan & confirm order of the day

Wedding Day The By Ambience team will arrive early to set up- kitchen, tables, chairs & linen The Ambience Service team will place table centres and other decorations Lay tables with cutlery, crockery and glassware to match with the menu selection Guests will arrive followed by the Bride and Groom Canapés and Champagne to be served on arrival during photography, Bride and Groom to go and have personal photo’s done.

By Ambience is best known for its canapés and canapé events which it serves regularly at champagne or cocktail receptions.

Canapés On Arrival

Our canapés help put on a truly exceptional display, they work extremely well upon the arrival of your guests after the ceremony at your chosen venue. We highly recommend these as you are going to be spend quiet sometime getting those very important shots of your family, bridal party and friends, it is nice to offer your guests some bitesize Canapés, just to tie them over along with some Prosecco or Pimms. As your guests arrive it’s always nice to thank them for their attendance by supplying them with a drink on arrival be that one or two glasses. We tend to serve some form of bubbles be that Champagne, Prosecco or Sparkling Wine, however we can also supply Summer Pimm's or even Beers, as well as non alcoholic beverages, it’s really up to you.

Arrival Drinks Table Wines

Once all of your family and friends photos have been taken, Arrival drinks and Canapes gone and your guest are seated then a selection of Wines and Mineral Water are displayed on the tables for your guests to enjoy with their meal. Once the Wedding Breakfast has finished it is tradition to serve a toasting wine ready for those speeches, this could be Bubbly or even something slightly stronger, Port? We get asked for a variety of options when it comes to the Wedding Breakfast and the main meal of the day, so we have listed a few options below.

Wedding Breakfast

Probably the most traditional option for your special day would be a three course dinner, however the menu selection does not have to be traditional, our experienced chefs, whom have worked in the restaurant and hotel industry for many years, have created extensive menu options. If you are looking for something extra special, we will work with you to create your dream menu. Something lighter, for a later wedding ceremony could be an Afternoon Tea, with Delicious Sandwiches made using the finest ingredients, a selection of our homemade savory pastries, and some of those tasty treats, Macaroons, Scones & cakes, served with Fresh Tea and Coffee. With the evening food being more substantial. You could even have a one of our delicious Hog or Lamb Roast as the main part of your Wedding Breakfast, served with deliciously crisp rosemary and garlic roast potatoes, selection of fresh salad and homemade chutneys and sauces. This with a Fruity dessert finish would leave a lasting memory of a great wedding breakfast. Barbeques are another classic for a wedding and a very effective way to offer your guests a choice of meats they would like, it can also make the formalities of a wedding seem a lot less formal, great for a very relaxed wedding day. We can serve barbeques as a large served buffet or we can create mini buffets for each table, a great way for your guests to be involved. As you can see from above these are just a few ideas to get you thinking about what you would like to create a truly unique wedding day.

Evening Reception

For the evening reception there are so many possibilities for food, are you looking for a traditional buffet, bacon and sausage rolls, hog roast or barbecue buffet, what about our grazing menu-Cured meat, cheeses and antipasti's, we have even been asked for a jacket potato stall with a variety of toppings the choices are endless. We can cater for all of these and many more, so let your imagination run wild. We tend to recommend catering for around 75% of your total guests, as your day guest will have already eaten, however, something to nibble on to see them through the rest of the evening is a good idea. We even supply the Evening Bar, we have fully equipped bars with a full range of Lager, Cider, Wines and Spirits, you can be sure there will be enough drink to last throughout the evening. As you can see we complete the whole package as we believe this is the best way for you to receive the best value for money, and ensure the highest quality is maintained throughout your day. 03300 58 10 10

Typically for everything listed above, on average will cost £60per person +VAT, however our prices do differ with every event, so it is best to get in touch to create your bespoke package We work very hard for you to ensure that planning your wedding is as stress free as possible, the By Ambience Team have been assisting Brides and Grooms for many years, and we do this for a living, so please feel to ask any questions that you may have.

Amazing food, attention to detail at every moment throughout the day. Exceptional service from booking to wedding day itself.
