Your Hospitality and Catering Journey The hospitality sector is a vibrant, fast-paced and rewarding sector that employs a workforce in the UK of around 2.5million.

Progression opportunities

We are passionate about developing the complete set of skills that employers expect. As well as high standards of vocational training throughout your studies in the Academy and through all the experiences we can offer, we aim to develop your confidence, resilience, can do mindset, presentation skills and general all round ability to succeed in the work place.

We also offer a wide range of part-time, leisure and professional courses in everything from accountancy to Photoshop – so if you need to top-up your skills in other areas, we’re sure to have the course for you. Here at Northumberland College we offer courses from entry level through to Honours Degree in partnership with leading universities. 90% of our students move in to positive destinations following their study with us that means either into employment or further study.

Northumberland Career College may be of interest if you would like to combine academic studies with a more practical element – specialising in an area that is of interest to you. Northumberland Career College has specialisms within Construction, Engineering, Hospitality and Catering, Tourism, Land-based Industries and Animal Care. At our Career College, you will learn through practical experiences, projects set by employers and of course, quality work experience opportunities. This is in addition to a solid academic education.

Employability and life skills

We embed employability skills that will help you in your future career throughout our Student Journey - Your Passport to Employment. English, maths, communication skills, resilience and team work are all built into our courses. We offer a wide range of enrichment opportunities including trips and visits associated with your chosen course, sports teams, the opportunity to get involved in the Student Association, and at the start of every course you and your fellow students will have the chance to visit our Activity Centre at our Kirkley Hall campus to take part in an adventurous team building day. Work experience is built in to all of our fulltime study programmes too so you’ll develop know-how in practical situations. In addition we have links with hundreds of employers throughout the region. We place great importance on attendance and punctuality and our tutors will also help you to develop time management, motivation, and team work skills that will not only help you to achieve academic success but will show a potential employer that you also have the skills required for the work place.

Travel Northumberland College’s transport network for 2016.

We have invested in a network of 10 dedicated bus routes* across Northumberland and Tyne and Wear to provide transport from a place near you to your chosen campus. All of our college-run services are flexible; if you see a route near you speak to us and we will do our best to create an accessible pick-up point! Services will also link with local bus, rail and metro stations for those learners outside of these services. Enrichment activities

We have an exciting new enrichment programme with lots of activities planned throughout the year. You’ll be able to try something you’ve never done before, develop your talents or find a new interest or hobby. If there are any new activities you want to take part in, please send us your suggestions via Voicebox or talk to the student mentors. You will have the opportunity to represent the college in various Inter and Intra College competitions throughout the year such as 5-a-side football tournaments, team building challenges and badminton competitions.

Think you can’t afford to come to college? Think again!

If you are a young parent aged under 20, you could get up to £160 per child per week to help cover the costs for registered childcare, whilst you are studying.

Aged 19 or over and thinking about further education?

From September 2016 The Advanced Learner Loan from the Government is for people aged 19 or over who wish to study a course at Level 3 or higher. It will help you to cover the cost of tuition fees, and you won’t need to pay a penny back until you earning over £21,000 per year!

From running thriving businesses to landing top positions in venues as prestigious as Gleneagles in Scotland, we have seen our hospitality and catering students achieve great things. Our new 40-seat restaurant serving à-la-carte menus at our Ashington Campus provides a realistic working environment for our students to develop the skills required by the industry.

The restaurant is licensed and is open to the public for morning coffee, lunch and dinner. The quality of service and food provided by our students, working under the guidance of highly skilled tutors, makes it a popular eating venue for staff, students and members of the public. In addition, we have numerous other real enterprises to train within alongside our highly skilled tutors. These include weddings, conferences and various types of events at our award winning Kirkley Hall Campus.

Progression and career opportunities You can study with the college up to Level 5 on our HND Hospitality Management course and could then progress to university or into the hospitality industry. New for 2016 - successful HND students will be able to study a BA (Hons) in Event Management (top-up) with the University of Cumbria, at Northumberland College. Chef, hotel reception manager, caterer and operations manager are just some of the careers available to you if you study a course in hospitality and catering.

What will I study on this course?

What will I study on this course?

You will spend time doing practical activities in our professional training kitchens to develop your kitchen skills. You will also have an opportunity to practice your food preparation skills weekly in The Gallery Restaurant. There is a considerable classroom element of the course where you will enhance your employability skills. You will learn how to present yourself to the public and to customers and how to maintain a professional appearance. You will work on interview skills and how to work well in a team. This will help prepare you for a career in the catering industry and to progress onto higher level qualifications within the area.

Entry requirements

You must have basic skills in maths and English but there are no formal entry requirements for this course.

Next steps

After successful completion of the course you could progress on to study a Level 1 course here at Northumberland College or seek work in the Hospitality and Catering industry.

You will spend time doing practical activities in The Gallery Restaurant. You will experience a realistic working environment working in the kitchen during the lunch-time service to develop your basic kitchen and cooking skills, and practising your food service skills serving customers in the restaurant. You will also look at the theory of cooking processes and food service covering topics such as food safety, cooking techniques, food and beverage service, menu planning and preparing healthier foods and food for special dietary requirements.

Entry requirements

You will generally be required to have gained five GCSEs at grade D/E or above although there are exceptions and have basic skills in maths and English. Mature students with no formal qualifications are welcomed.

Next steps

After successful completion of the course you could progress on to study a Level 2 course or find work in the Hospitality and Catering industry. What will I study on this course? This course will broaden your cooking skills so that you understand the theory underpinning cooking processes.

There are a range of units to choose from such as an introduction to the catering and hospitality industry, food safety and health and safety awareness, personal workplace skills, healthier foods and special diets and preparing and cooking a range of dishes using a variety of cooking methods.

Entry requirements

You should have two GCSEs at grade F or above and basic skills in maths and English.

Next steps

On successful completion of this qualification you could progress onto a NVQ Level 2 Diploma in Professional Cookery here at Northumberland College or into employment at a commis chef level within a kitchen.

What will I study on this course?

You will be able to develop the skills learned at Level 1 to learn more about food preparation and more complex cooking techniques, alongside developing your food and beverage service skills. You will learn about preparing, cooking and finishing fish and poultry dishes, meat dishes, soups, pastry dishes, desserts, vegetables and pasta dishes. You will learn about setting up and closing the kitchen and how to order new stock. Your practical work will be assessed in the kitchens and The Gallery Restaurant, you will also have the chance to work in the kitchens at Kirkely Hall, our award-winning weddings and conferencing venue. There is a classroom element of the course where you will look at the theory of cooking processes and food service. You will cover topics such as food safety, cooking techniques, costing and menu planning and preparing healthier foods and special dietary requirements.

You will generally be required to have gained a Level 1 qualification in food production and cooking or equivalent and have basic skills in maths and English. Mature students with no formal qualifications are welcomed.

Next steps

After successful completion of the course you could progress on to the Level 3 Diploma in Professional Cookery or Level 3 in Hospitality Supervision. Career opportunities include working in the kitchen or front of house as a server, barista or bar staff in a variety of pubs, clubs, restaurants and hotels.

There are a range of units to choose from whilst studying on the Diploma programme. You will learn how to prepare and cook meat, poultry, vegetables, sauces, soups and desserts. This qualification will provide learners the opportunity to broaden their range of cooking skills and be able to understand the theory which will underpin their cooking skills and then be able to apply and adapt the skills they have learnt in different working environments.

Successful completion of this qualification would enable you to enter employment within a kitchen environment or progress onto a Level 3 course here at Northumberland College.

The course consists of students working within the realistic working environment of the college’s school of catering in The Gallery Restaurant, our 40 seat commercially run restaurant, which is open to members of the public as well as staff and students. This course will allow you to develop a broad range of practical culinary skills that will equip you for the rigours of the modern kitchen environment. An ideal student for this course is one who is motivated with a desire to learn and is passionate about gastronomy. You will learn advanced skills in the preparation, cooking and finishing of soups and sauces, meat, fish and vegetables, pastry and hot and cold desserts. You will undertake some evening work in The Gallery Restaurant and the course will develop your practical skills and knowledge for a career as a chef in the catering industry. You will also have the chance to work in the kitchens at Kirkely Hall, our awardwinning weddings and conferencing venue.

You would normally be expected to have a Level 2 or equivalent and be working in the hospitality industry. Placements may be found for those with experience and who are currently unemployed.
