VEGAN whoopie pies?! You bet! These are chocolate flavored, but red thanks to the beets! Add a drop of food coloring or use a regular egg and less cocoa powder to keep the batter lighter in color and more red.

INGREDIENTS 1 ½ cups sifted oat flour ¼ cup coconut sugar ¼ cup sweetener/stevia 3 Tbsp coconut oil, melted & room temp 1 flax egg (1 T ground flax + 3 T water), or 1 egg 1-3 Tbsp cocoa powder ⅓ cup pureed beets ⅓ cup almond/cashew milk ¾ tsp baking powder ¾ tsp baking soda ¼ tsp salt 1 tsp vanilla coconut whipped cream for filling

PROCEDURE • Preheat oven to 350°F. • Whisk together dry ingredients and set aside. • Beat oil, sugar, flax egg, beets and vanilla in another large bowl. • Add ½ dry mixture to wet, alternating with ½ of the milk, until everything is combined. Beat until smooth. • Drop batter by the tablespoon onto a baking sheet. Flatten out with the back of the spoon if you'd like them to be flatter whoopie pies. • Bake until firm to the touch, about 8 minutes. • Cool on the pan until cool to the touch. • Fill with your coconut whipped cream filling (add extra powdered sugar to make it more firm). • Chill for about 30 minutes before devouring.
